I started the day off with making my Mid Morning 8oz Juice of Carrot, Celery and Greens before I headed out to church.

I used Celery for Beets, because I had ran out and just used Green Leaf Lettuce for the Greens. I drank the Juice on my way to church and on my way home… and it was really good.

While I was out.. I made it a point to put together my grocery list and hit the Whole Foods and Giants for groceries. At Whole Foods, I picked up the Raw Apple Sauce I ate for lunch.

Mid Afternoon: it’s an 8oz Carrot Juice with Barley Max Powder. But unfortunately, my order has not come in yet… so it’s just Carrot Juice and maybe some Celery and Cucumber.

Dinner menu looks like this: Garden Salad and¬† Minestrone Soup. Looking forward to making dinner. ūüôā

Garden Salad:

Ingredients:

2Cups Romaine Lettuce

1/2Cup thinly Sliced Radishes

1 or 2 Green Leaves

1Cup Spinach Leaves

8 or 10 Cherry Tomatoes

1/2Cucumber

Directions: Wash and dry veggies and tear lettuce and spinach into bite-size pieces. Slice radishes, slice onions, add cucumber and tomatoes. Top with desired dressing.

Minestrone Soup:

Ingredients:

8Cups Vegetable Soup Stock

11/2Cup Garbonzo Beans

2Cups Red Kidney Beans

1/2Cup Carrots

3Medium Tomatoes

1/2Cup Fresh Parsley

Celtic Salt

1Cup Cabbage

1/2Cup Onion

1/2Cup Celery

1Clove Garlic

1/4Tsp Thyme

3/4Tsp Basil

1/4Tsp Oregano 

1/2Box of Spinach Noodles

Directions:  Peel and Dice Tomatoes. Cook and Drain Kidney and Garbanzo Beans(I used canned) . Mince Garlic and Parsely. Chop carrtos, onion, celery, cabbage and garlic and saute in water or soup stock over medium heat until the onion is translucent Рabout 5 minutes. Stir in kidney beans, garbanzo beans, diced tomatoes and minced herbs. Bring to a simmerm then turn heat down and simmer about 10 minutes. Stir in Parlsey and simmer with lid partially on for about 15 minutes or until cabbage is tender. As the soup cooks, it will thicken. Add more tomatoes or soup stock as needed. Serve over spinach noodles.

I woke up this Saturday morning, bound and determined to go to a pilates class. I had enough of laying around. My body and muscles were atrophying! When I woke up around 8:30am I turned on the T.V. and watched a movie (Divine Secrets of the Ya Ya Sisterhood). As the next movie started (27 Dresses) I got up to make myself an Avocado Sandwich.

I went downstairs to¬†put two slices of Whole Grain Wheat Bread (from Whole Foods) into the oven to¬†toast. While I was waiting for the bread to toast, I mixed my Barley Max and drank it. Then,¬†I spread a bit of “I can’t believe it’s not butter” onto the bread, sliced up the Avocados, placed¬†them on each piece and lightly salted with Sea Salt. Yum Yum Yum!

By the time I ate¬†my quick feast, it was time to start getting ready for my Pilates class.¬†I actually scheduled the class last night, so I was financially obligated to attend the 11am Beginners Class. And the whole time I was getting ready,¬†I was very worried how my back would feel in¬†class, because it wasn’t¬†100% yet. There’s still some stiffness and pain when I move and walk. But I am feeling more flexible and mobile, even after walking around in those high heals yesterday.

I certainly remembered what happened last week when I was feeling better. I did something, or it was a combination of my activities that¬†I reinjured my back. And I wasn’t looking for¬†a repeat of that. So in¬†the class, first thing I did was let the instructor know I have some back issues and I was very hesitant and slow to make any of the¬†moves.¬†But as the class progressed, I was making my moves more confidently and putting more effort and energy into each move. To say the least,¬†I am¬†surprised at how flexible I was without the pain I was expecting!

And as I type these words, my back is still feeling good after taking the pilates class. I am laying on the heating pad for a bit, just as a precaution!:)

I did snack on some Pita Chips and Hummus again and did drink my Vedge Vegetable drink from BoltHouse. It’s a great combination of 7 Vegetables (kinda like a v-8 juice drink). We picked that up the day before at Whole Foods. I’m trying to drink 2-8oz glasses a day.

For dinner I got up and made a Broccoli Noodles where I just cut up some Mushrooms, Broccoli and Boiled Noodles we bought at Whole Foods. I threw in the Broccoli and Mushroom to blanche with the Noodles. The Dressing was an Oil, Dried Onions, Paprika, Sea Salt, Corriander Seasoning.

Happy New Year… it’s finally 2010!!!!¬†No more preparations or resolutions to contend with. Because, I’m not much of a new year’s resolution person. I’ve learned not to make any promises I couldn’t or wasn’t going to keep. So,¬†these days,¬†I begin everyday with the hope and inspiration¬†of¬†improving myself¬†and the world¬†I live in from the day before.

With that said, I suggested to Mike, lets go out and take in the first day of the New Year. In the car, Mike and I decided to drive down Highway 7 to see where the road¬†took us. We ended up at Whole Foods, where I loaded up on some ingredients I remembered from a grocery list I made¬†for some dessert recipes out of my cookbook. I didn’t have the list with me, so I hope I got all of them. Because I don’t remember where that Whole Foods is!

From there, it turned out to be a day of shopping. We went to the Dollar Store, Target and finally, Leesburg Outlet Mall. But before we went to the outlet, we needed some nutritional sustenance. Panera Bread filled that void, where I usually get a soup and salad meal. But today, I opted for the Mediterranean Vegetable Sandwich on Tomato Basil Bread with my standby Garden Vegetable Soup.  

After lunch, we¬†stopped at Calvin Klein, then I headed into Coach and we pretty much wrapped that spree up. For no other reason then my¬†shoes, they¬†were not the shoes to be wearing for a day of shopping. On the way home, I was thinking about eating the Vegetable Salad from the night before and that’s exactly what happened.

I did finally manage to drink¬†my Barley Max before this meal. Lately, I’ve been doing really badly with taking my Barley Max 30 minutes before my meals.¬†I’m lucky if I take it a few minutes before I eat. Truth be told, since I’ve been on the road during the holidays these last two months, my schedule and dedication to¬†“RawtoLose 40 eating plan” has really¬†deteriorated. It’s a totally different eating plan than what I started September 1, 2009. Hopefully, going into this New Year, I can get back on track with the Juicing, Barley Max, and preparing more of my own meals.

My brothers boys have got to be the best little monsters in the whole wide world… in part because they’re my little nephews. They are soo much fun at their ages 6 and 7!!! I think they’re like Steve and I when we were kids… so much energy and always on the go!!!

In the morning… Christie and I were texting and we decided to meet her and the boys at the Hotel Pool so the boys can have some fun. Of course they were jumping in, when the sign said NO JUMPING, but we weren’t about to say anything!! After we dried them off and dressed them back up… we went to their place for lunch.

I was on a veggie kick. I had a Carrot, Broccoli, Cucumber Salad and then followed it up with two pieces of Cheese Pizza…. On vacation this eating plan is put on the back burner. Especially when there’s pizza in the same room with me. Pizza and French Fries are my downfall….

Stopped in to Whole Foods and picked up a side dish of Rice Pilaf and went to my step brothers house for dinner. It turns out, his wife ordered Pizza from Pizza Hut too!! At least I had the Rice Pilaf:)

As we checked in yesturday… I eyed the Whole Foods Store across the Interstate and was jumping up and down inside. In Florida, I realized Whole Foods has a Juicing Station and I assumed all the Whole Foods Groceries have them. I was mistaken. This morning we drove over to the Whole Foods across from our hotel room and there wasn’t a Juicing Station.

Saddened by the news, we went over to Einstein Bros. Bagels and I had a Caramel Frappucino, and a Whole Grain Wheat Bagel with Honey Butter. ūüė¶

But then we decided to go down to King Soopers, another grocery chain in the state and found some 100% Carrot Juice and 100% Veggie Juice Mix drinks. So we bought them, looking to replace my daily juicing needs. To verify just how natural and organic these juices are… we called the 800 number on the bottle and found out that the only additives in these juices are salt, and only for the Veggie Mix Juice. The Carrot Juice has no additional additives. YEAH!!!!

So my juicing concerns are taken care, I’ve got my Barley Max… and now we’re going over to my brothers place to hang out and have lunch. Then it’s over to my step brothers place for dinner. Busy Busy Busy!!!
