The Passover Seder Plate

This is the traditional arrangement of the Seder Plate.. I picked up on the internet.

The Passover Seder Plate (ke’ara) is a special plate containing six symbolic foods which have special significance to the retelling of the story of the Exodus from Egypt. The seventh symbolic item – a stack of three matzot.
Here is the Passover Seder Plate I made for Monday Night’s Seder with Mike and his Children.

The 6 items on the Seder Plate – and what I made:

  • Maror and Chazeret:  For maror, many people use freshly grated horseradish or whole horseradish root.  I USED HORSERADISH SAUCE. Chazeret is typically romaine lettuce, whose roots are bitter-tasting.  I USED ROMAINE LETTUCE.
  • Charoset: A sweet, brown, pebbly paste of fruits and nuts, representing the mortar used by the Jewish slaves to build the storehouses of Egypt. I USED THE CHAROSET MIKE MADE WITH DATES & ALMONDS.
  • Karpas: A vegetable other than bitter herbs, usually parsley… WHICH IS WHAT I USED. FOR DIPPING I BROUGHT OUT A DISH OF WHITE WINE VINEGAR.  
  • Zeroa: A roasted lamb bone, symbolizing the korban Pesach (Pesach sacrifice), which was a lamb offered in the Temple in Jerusalem and was then roasted and eaten as part of the meal on Seder night.  I ROASATED 5 LAMB CHOPS IN OLIVE OIL AND SEASONINGS.
  • Beitzah: A roasted egg, symbolizing the korban chagigah (festival sacrifice) that was offered in the Temple in Jerusalem and was then eaten as part of the meal on Seder night. I ACTUALLY BOILED 6 EGGS.

Once the Seder was complete, we brought out the Matzo Ball Soup, Cucumber & Tomato Salad, Rice, and Polo Horesht.

I had never made Matzat Ball Soup… and took the liberty of pulling up the recipe online. Then I realized I didn’t have the Matzat Meal to make the Matzat Balls… so I had Mike go out and get it from the store.

Matzo Balls:

Ingredients:

2 Eggs

1/4 Cup Olive Oil

Contents of Matzo Pkg

 Matzo Ball Broth(Vegetable Soup):

10Cups Water

2Onions, Cubed

3Garlic Cloves

3Carrots

3Celery

2Potatoes w/skin

1Cup Parsley

1Bay Leaf

1Tsp. Thyme

1Tsp. Basil

2Cups Broccoli

2Cups Cauliflower

Directions: Bring Soup to boil and drop rolled pieces of Matzo Balls into water. Let Simmer for 30 minutes on low heat  and serve.

The Seder was very nice…. we read from the books and performed the Seder as close to the tradition as we could.

For the meal, I had some Mazto Ball Soup, Basmati Rice and Cucumber & Tomato Salad.

This morning I can say, Mike and I went for a walk around the neighborhood together. It’s something we haven’t done in a while, and it’s something Mike did on his brand new bike. He’s like a kid in a candy shop after buying his used trail bike. 

Since I haven’t been able to get a Pilates schedule, I’ve decided to walk around the neighborhood for my exercise. This weekend I got back into the groove!!

After my walk, got home to take a shower and hit the road to Orlando. Mike wanted to get to his favorite restaurant, Bahama Breeze for his Chicken Kabobs and St. Thomas Crab Claws.

 I have to admit, I did have 3 of those Crab Claws before my Breeze Salad and Cheese less Veggie Quesadillas arrived. I was proud of myself, usually I get my Bahama Rita drink and this time I ordered Water with a Lemon.

Then we battled the rain to head over to Whole Foods where I got some Dried Cranberries, Raisins and some new TPV. Mike wanted to return the Honey I picked up a while back because it started crystallizing (not a good sign).

After engaging the navigation system, we found a Costco down in Orlando and picked up some more Agave and some other goods and headed home in the rain. By the time we got home, the rain had stopped and we were able to get all the groceries out without getting soaked.!!!

Dinner was a mix of my Fresh Vegetable Salad, which I packed full of the leftover Kidney Beans and left over Chick Peas from the other day. Mike made his Potato Medley Grill.

After dinner we did the usual 60 Minutes and then Desperate Housewives. But afterwards, ABC aired something a little different. A show with Jamie Oliver called “Food Revolution”, where he goes to Huntington, W.V. and tries to reteach the way these people eat. Huntington was rated the city with the most obese people and city with horrible eating habits in the U.S. Very interested how the schools, families and community are killing themselves with all the fried, processed foods they’re eating.

Pineapple Salsa

OMG!!! I can’t believe that I did this.

Mike and I went to my girlfriend Robin’s house for a house warming she was having Saturday Afternoon.  So, I got up with every intention of making some salsas with the VitaMix to take to her party!

I made the Tropical Avocado Salsa – Again. Which turned out even better the second time???

Plus, I made a Pineapple Salsa:

Ingredients:

1Can Cut Pineapples

2Tbls. Olive Oil

1/2Small Onion, Peel

1/2Orange Bell Pepper

2Tbls. Cilantro

1/2 Lime, peeled

1/2Tsp salt

1/4 Jalapeno Pepper

Directions:

Oh they tasted soooo good. I also brought along some Tortilla Chips and some Ritz Crackers for dipping. After finishing the dips and running some last minute errands, we arrived at Robin’s house around 1pm.

I met Robin’s parents, her in-laws; it was such a lovely time. And Robin had out her appetizers (my salsas) and then a lunch which consisted of grilling hamburgers and hot dogs, shrimp gumbo, and a big Strawberry Salad. I had every intentions of eating. In fact I was snacking on my dips that I had brought. But as the afternoon went on, my glass of wine kept getting filled (Not once was my glass of wine empty for more than 10 seconds) and before I knew it, it was around 7 or 8 pm in the evening. 

Well, Mike had to pull me away from the festivities which had winded down to an almost screeching halt and drive home. Needless to say, I jumped right into bed and passed out when I got home.

The next morning, I woke up feeling sluggish and brandishing a headache from the night before. I didn’t do much, but watch movies and drink some Fruit Smoothies, Juice and water. I did have enough energy to get up and make my own version of a Strawberry Salad for lunch and for dinner, Mike got take out from The Outback Restaurant. I ordered a Baked Potato and had some more of my Strawberry Salad.

Barbara’s Strawberry Salad:

Ingredients:

Baby Green Lettuce

Spinach

1Cup Cut Mushrooms

3Green Onions

1Carrot

1Small Bunch Broccoli

6Strawberries Fresh Cut

Oil & Vinegar Dressing

Directions: Wash, cut up all vegetables and fruit and mix into salad bowl. Pour Oil & Vinegar on individual serving.

 I was feeling a little inventive Tuesday afternoon. I took the day to watch old movies on TCM… it’s a hobby I don’t get to do very often. After having a late lunch of Green Salad with Oil&Vinegar Dressing, I decided to make a soup to use up some of the vegetables we had in the refrigerator. We’re going to be going back up to Washington D.C. area again this week.

So I consulted with my cookbook “Recipes for Life” and decided to make a Minestrone Soup with some extra veggies (cauliflower). So I literally threw this soup together and warmed up a loaf of Whole Wheat Bread and we were ready to sit down for dinner.

 

My Minestrone Soup

My Minestrone Soup W/Spinach Noodles

My Minestrone Soup:

Ingredients:

8Cups Distilled Water

1Cup White Beans

1/2 Spinach Pasta

2Tbls Olive Oil

1Onion, Chopped

2Cloves Garlic, Chopped

2Medium Carrots, Chopped

2Stalks Celery, Chopped

2Potatoes, Peeled & Cubed

4Tomatoes, Cubed

1Small Zucchini, Cubed

1/2Green Beans, Sliced

1Cup Cauliflower

1Tbls Dried Basil

1Clove Garlic, Whole

1Tbls Oregano

1Tbls Thyme

Directions:

Rinse and soak White Beans according to the package instructions. Discard water and add fresh water. Cook according to package instructions, omitting salt and set aside.

Cook pasta according to package instructions, omitting salt, drain and set aside.

Heat Olive Oil in a large, heavy pan over medium-high heat. Add Onion, Garlic, Carrots and Celery. Sauté until Onion is translucent. Add Potatoes, Tomatoes, Zucchini, Green Beans, Cauliflower, and water. Reduce heat and simmer 30 minutes. Add White Beans and Pasta. Add more water if soup is too thick. 

In a blender process Basil, one whole clove of Garlic and 1Cup of Soup from the pot until smooth. Return this mixture to the soup. Mix well and serve hot.

My friend and her daughter got here after 1am. It was a long drive for them and a long wait for us. Staying up that late is exhausting. So needless to say, I didn’t want to wake up Saturday morning.

But we did get up are 8am.. and I got out my Almond Butter and warmed up some Whole Wheat Bread and put it out on the table, while Mike made his famous scrambled eggs.  I made the Almond Butter the night before and couldn’t wait to get my hands on it… and when I did it was delicious. I can’t believe it was so good on the bread like that.

2Cups Almonds

1Tbls Honey

1/2Bottle of Water

Directions:

Soak Almonds overnight in water. Put Almonds into food processor, add honey and water as mixture blends together into a chunky paste.

Once we cleaned up from breakfast, we jotted down to D.C. to do a little sight seeing with my girlfriend and her daughter.

We actually had a chance to see the President leave from the Whitehouse.. or at least that’s what we thought was going on out there with all the secret service guys.

Then, we headed over to New York Avenue to do a little wholesale shopping with the store owners there. It’s a great place to buy stuff at bulk/discount prices.

It was getting later in the day and  that time, we were all hungry. We made it back to the house around 3pm and we unloaded all our bags and I started warming food up and putting finishing touches on some things. I asked Liz to set the table and then we all sat down to Mike’s Roasted Eggplant & Potato and my Stuffed Avocado dish, Almond Cheese, and for dessert we had my famously new recipe for Strawberry Pie.

Stuffed Avocado:

Ingredients:

2Ripe Avocadoes

1/4Cup Green Onions

2Tsp. Fresh Lemon Juice

2Tbsp. Olive Oil

1/4Cup Carrot

1/4Cup Celery

1/4Cup Beet

Directions:

 Mince Green Onion, shred Carrot and beet and finely dice celery. Peel avocados, cut in half and remove pit. For each serving, place 2 halves of avocado on a bed of mixed greens and stuff with vegetables. Combine lemon juice and oil and drizzle over stuffed vegetables.

Almond Cheese:

Ingredients:

1Cup Distilled Water

1/2Cup Red Bell Pepper

1/4Cup Nutritional Yeast Flakes

1/2Tsp. Garlic Powder

1/2Tsp. Sea Salt

2Tsp. Onion Flakes

4Tbps. Agar Agar Flakes or Arrow Root Powder

1Cup Almonds

1Tbsp Tahini or 2Tbsp. Sesame Seeds

2Tbsp. Lemon Juice

1Tsp. Paprika

1Tbsp. Vegetarian Parmesan Cheese

Directions:

Place water and almonds into blender and process until a creamy milk consistancy is reached. Pour into saucepan, Mix in agar agar(or arrow root powder) and bring to a boil. Immediately, reduce heat and simmer for 5 minutes or until agar agar (or arrow root powder) is completely dissolved. Place mixture in blender, and add remaining ingredients and blend until smooth. Scrape sides until all ingredients are  mixed well. Pour into container and refrigerate until set. This cheese can be sliced in the size you prefer.

Fresh Strawberry Pie:

Ingredients:

Pie Shell:

1Cup Raw Almonds, Soaked Overnight

1Cup Soft, Pitted Dates

1/2Tsp. Vanilla

Soak almonds in distilled water for 12 hours. Grind the nuts in a food processor until finely chopped. Add the dates and vanilla and blend well. Press thinly into a pie plate (from center to the outside rim) to form the shell.

Binder:

7 or 8 Large Ripe Strawberries

5 Soft Dates, Pitted

2Bananas, ripe

1Tbsp. Fresh Lemon Juice

Blend all binder ingredients in food processor or blender until well mixed.

Fruit Filling:

Cut 2 pints of fresh strawberries into quarters, and fold into binder and fill shell. Decorate with approximately 1/2 pint of quartered strawberries. Cover with plastic wrap and store in refrigerator. Chill before serving.

And that was it for both lunch and dinner. I did however make Almond Milk with the left over Almonds Soaked in water. The ingredients are easy, but the process is a bit time consuming.

1Cup Almonds, Soaked Overnight

1/2Bottle Water

2Tbls. Vanilla

4 Pitted Dates

Directions:

Drain almonds from water and peel skin off of the nuts. Place the nuts into food processor and blend pouring in the Vanilla and Dates and water to keep substance smooth. Strain ingredients through a cheeseclothe until liquid milk comes through. Keep refrigerated.

This morning was my first day back to Pilates… and boy did it feel great. I took the Jump Board Pilates 30min class with Lindsay. She’s got to be the best pilates instructor ever… because she works you hard.

All day today, I’m feeling the burn from this morning… and I hope I’m up for the hour long class tomorrow. I love these Pilates classes at Potomac Pilates(just up the street from me), that I’ve already signed up for a class tomorrow. That class is an hour long Intermediate Pilates Class. Generally, I like to go to the 7am or 7:30am classes… and because I live just a few minutes away, it works for me.

Out of the shower, I weighed myselft… GOOD NEWS!!! I came in at 168lbs. And since I’ve been doing my crunches and arm weights at night lately, I decided to measure myself as well. I think the numbers are going down from last time I measured-a couple of months ago(November 5, 2009).
Chest: 40″
Waist: 35″
Hips: 40″

Things are looking better in the weight loss and eating raw departments…

Because on a side note…. to prove my theary of eating raw is good for you and healthy, I got some much needed third party encouragement. Mike went to the doctors this morning and just for his curiousity he asked, what foods are good to eat for you.? And the doctor replied, If it comes out of a cow it’s not good, if it comes out of the dirt it’s good.!!!!!!!!

And as I continue on with the Rawtolose40 Plan, for lunch I ate my Vegetable Salad from last night and took my spoonful of Barley Max (it came in the mail) and am drinking Water and Carrot Juice.

Dinner is still a question at this point in the day…

We pushed through all day Friday… and into the when. When we finally got into Potomac, MD at 1am. It was rough!!! I was sneezing and coughing and blowing my nose every five seconds. And to top it off, I was driving. 😦

We left Albuquerque, NM Thursday morning with temperatures in the teens… Yikes! It had been way too long since I was in temps that cold. But Mike was driving and we made it into Amarillo as the sun started to peak out of the clouds and warm things up.

We stopped off at Wendy’s for a Baked Potato and Green Salad. I immediately ate the Baked Potato and held off on the Green Salad until later…. we ended up sleeping in Little Rock, Arkansas.

From which we left early in the A.M. Friday morning… there was a Starbucks right next door to the Hotel, and I couldn’t resist the temptation of a Pumpkin Spiced Latte with Soy Milk…. From there we pushed into Tennessee where we stopped for lunch. I wanted so much to eat fast food, but we actually found a Panera Bread place. That’s where I warmed right up with a Vegetable Soup and Green Salad with an Apple on the side. That was a very refreshing lunch, from which I got up to take my empty plates to the trash, when I hit the dividing wall and dropped the soup bowl on the floor. It made the loudes crash… for which I was completely imbarressed.

Moving on,… for the rest of the journey to drove in the dark and only stopped for gas and to switch drivers. I ate my Apple from lunch and had some Almonds and drank alot of water. Finally, we made it!!!
