After a weekend of a lot of eating and entertaining it was time to get back on the Pilates Studio horse and work it all off. But as luck would have it, this Monday morning I got up and made it to the studio in the rain to find a locked door. No one was there… and no one showed up after about 10 minutes of waiting around.

While I was waiting I thought about getting how I planned to get a workout in today and possibly start the 14 Day Hallelujah Acres Eating Plan to lose this remaining 18lbs. before my June birthday. But as it turned out, the day was not going my way.

So, I turned around and headed home to get ready for the day. I made my breakfast of 1tsp of Barley Max Powder mixed with 4-8oz of Distilled Water.  Then I made my Mid Morning 8oz Juice of Carrot, Celery, Spinach which I drank on the road along with a premixed Barley Max.  I drank that mix 30 minutes before we made it to the Olive Garden for lunch, where I had my usual Italian Salad and Minestrone Soup. I decided to get another bowl of soup to take home and eat for lunch Tuesday.

We made it home just after 4pm and I grabbed the Bolthouse Farms Vedge Juice out the refrigerator for my Mid Afternoon 8oz Juice. I ran out of Carrots, and didn’t make it to the store to buy more… thank goodness I have this juice.

While I was drinking the Tomato Juice I started getting hungry, so I started making a dinner of Green Vegetable Salad and Roasted Vegetables. The vegetables at the house were getting old and wrinkled, so I had to do something with them.

Green Vegetable Salad:

Ingredients:

Handful of Spinach Leaves

1/2Red Onion, Chopped

1Tomato, Diced

1Orange Bell Pepper, Chopped

2Cucumbers, Peeled & Chopped

Directions: Wash, Peel, Dice Vegetables and mix into bowl. Add Salad Dressing Balsamic Vinaigrette from Wish Bone.

Roasted Vegetables

Ingredients:

1Zucchini

1Yellow Squash

4 Red and Yellow Potatoes

1/2Red Onion

2Tbls Olive Oil

Corriander

Paprika

Dried Onion Flakes

Garlic Powder

Directions: Preheat Oven 450 degrees and Wash, Dice potatoes. Mix olive oil and seasonings and place them in a pan and roast. Once potatoes are tender, then add  Chopped vegetables and roast until tender and brown.

For an evening snack while I was watching Dancing with The Stars, I had a bowl of Stacy’s Pita Chips. I think I need to stop eating them, because I’m getting some soars in my mouth from all the salt.!!!!

I hit the Pilates Studio Wednesday morning…. feeling the pain from the morning before. Boy, Cyndi our instructor really gave us(me) a leg workout Tuesday. I think it was a combination of not doing Pilates from Friday to Monday and also putting a little more attention on the legs Tuesday. It really made climbing the stairs this week a bit more difficult.

But anyway, I got home from the Jump Board 45minute workout and started fixing my Breakfast  of 1Tsp of Barley Max Powder with 4-8oz of Distilled Water.

Then I mixed my Mid Morning 8oz Juice of Carrot, Celery, Spinach. I’ve become partial to this mix of vegetables.. and when I have the fresh Parsley I will add it too!!

30 minutes before Lunch I mixed 1Tsp of Barley Max Powder with 4-8oz of Distilled Water.

And prepared something I picked up from my girlfriend on my trip to New York. She made me a sandwich with Cucumbers, Tomatoes, and Red Onions one afternoon and it tasted so good, I recreated the meal.

Vegetable Sandwich on Whole Wheat:

Ingredients:

1Cucumber

1Tomato

1/2Red Onion

2-4 Slices of Whole Grain Wheat Bread

Directions: Wash and slice cucumbers, red onions and tomatoes. Slice Bread and layer ingredients and top with slice of bread.

I was feeling  a little rushed and knew I picked up a Bolthouse Farms Juice at the market the other day and decided to implement that in my day. So, for my Mid Afternoon 8oz Juice I used the Bolthouse Farms Vedge Juice which is 10 different vegetables mixed together. It kinda tastes like a V8 cocktail mix.

30minutes before dinner I mixed 1Tsp of Barley Max Powder with 4-8oz of Distilled Water. And afterwards I started on my meal. I decided to keep it light for dinner with a Loaded Cucumber & Tomato Salad:

Ingredients:

3Cucumbers

1/2Red Onion

1Yellow Bell Pepper

1Tomato

Corriander

Parsley

Paprika

Dried Onion Flakes

Garlic Powder

2Tbps Olive Oil

Directions: Wash, peel  and chop vegetables. Mix into bowl and add olive oil and season to taste.

It started out on a positive note with a morning pilates class… but as I returned home, I realized I had ran out of the Barley Max and would not be getting any until Monday or Tuesday.

But I did prepare my juice… for my Mid Morning 8oz Tomato, Cucumber, Celery Juice

HINT:  Although tomatoes are a fruit, most people think of them as a vegetable so this juice is listed here. Fresh, raw tomato juice will taste and look quite different from those found in bottles and cans. Never use hot house tomatoes since they are picked green and gassed to make them turn red. 

Thinking in the back of my head I should juice the Mid afternoon 8oz Carrot, Celery, Cucumber (replaced spinach with Cucumber) before I leave the house this morning…. I didn’t. A mistake I will have to live with for the day.

Because as luck would have it… I did miss the Lunch of Peaches until satisfied, because I couldn’t find anywhere we were that sold Peaches. Costco and Walmart were not available.

But instead, I did have a cheese pizza at Costco. I did manage to scrape the cheese off the pizza before I ate it. At least I did that good.

Then by the time we came home… it was around 6:30 and I proceeded to make my Mid Afternoon 8oz Juice Carrot, Celery, Cucumber.

Dinner: Sunshine Carrot Salad, Green Pea Soup, Sunflower Loaf. WELL I DIDN”T DO ANY OF THAT.

Instead, I opted to finish leftovers from Saturday night. Mike started throwing food out of the refrigerator, so I had to get rid of leftovers before they got thrown away. Plus, I made a

Ingredients:

2Tomatoes

4Cucumbers

3Sprigs Tarragon

5Leaves of Mint

1Lime

Directions: Wash and cut up Tomatoes and Cucumber. Pick and chop fine the mint and tarragon. Cut in half a lime and squeeze juice over mix.

I woke up and went for a brisk walk around the neighborhood. It usually takes me about an hour or 45 minutes… depending on how fast I go. And I think length wise it’s about a 2 mile walk.

THEN…. Mike and I were set to go to the Farmers Market down in Flagler Beach. It’s about a 15 minute drive from the house to the Beach Market… and on our way down I decided to detour over to the Starbucks.

I know! I know!.. I had a craving that came over me and I indulged it. I had a Tall Iced Mocha with Soy Milk… boy did it taste good.!

Then we headed over to the beach and picked up some vegetables. I love coming home after the farmers market, because I fill up the basket in front of the kitchen sink on the counter with all the goodies and there are so many rich, bright colors to look at. I love that!!!!

This afternoon, Mike prepared a mid day feast for us. He made his famous Grilled Potatoes & Onions dish and then he tried a new recipe he got from his friend in California.

Saturday Lunch on LakeIt’s a Tomato, Cucumber & Onion Salad. And then we set the table on the patio and sat outside with a beautiful view of the lake behind the house. I sat across from Mike facing the ocean and saw a light blue calm ocean through the houses on beachside.

Ingredients:

2 Tomatoes

8 Little Cucumbers

1/2Red Onion

4 Mint Leaves

2Tbls. Olive Oil

1 Lime Juiced

1/2 Lemon Juiced

Directions:  Wash and chop Tomatoes and Cucumbers and mix into bowl. Add the Olive Oil and chopped Mint Leaves and squeeze lemon and lime juices into salad and mix well.

Ingredients:

4 Potatoes

2 Sweet Potatoes

1 Onion

Olive Oil

Paprika

Directions: Peel and cut potatoes and onions. Mix into pan and add Olive Oil and Paprika and girll on high heat for 20 minutes or until onions are translucent and potatoes are soft.

What a great day here in Central Florida! Mike wanted to make Minestrone Soup and started his cooking around 11 this morning.  So I let him do his thing and it turned out wonderful. Mike’s Minestrone Soup turned out very well, and I actually ate a bowl for lunch and another for dinner. I paired the soup with a couple of pieces of Whole Grain Wheat Bread…. too good!

Mike’s Minestrone Soup:

Ingrediants:

1Can Red Kidney Beans

1/2Can Chick Peas

1Tomato, quartered

1Can Diced Tomatoe

1Can Tomato Paste

2Carrots, diced

2Zucchini, choped

1Yellow Squash, chopped

2Cups Spinach

2Spoons Minced Garlic

6Red Potatoes, diced

1Red Onion, chopped

1Tbls. Dried Mint

2Tbls. Dried Parsley

1Tbls. Italian Seasoning

1 Bay Leaf

Celtic Salt

2Tlbs Olive Oil

Directions:

Wash and chop Onion, Potato, Zucchini, Squash into pan with Olive Oil and fry until Onions transparent. In a pot fill with 8 cups water, Kidney Beans, Chick Peas, Tomato, Diced Tomatoes, Garlic and other seasonings. Bring to boil, reduce heat to medium and add fried vegetables for another 45 minutes.

While we were in Daytona running some errands we came across a new restaurant called Vince Carter. It’s a very spacious piano bar, sports bar and steak restaurant all in one. The food was great too.!!!

I had a glass of Riesling Wine, which I didn’t finish; it was just a bit too soon to be drinking after Saturday’s binge. Then we ordered this great appetizer of Roasted Vegetables (Bell Peppers, Zucchini, Squash and Mushrooms) with a homemade Hummus and Bread.

For dinner I had a wonderful Central Salad, which consisted of

Romaine Lettuce, Artichoke Hearts, Cucumbers, Bell Peppers, Red Onion, Tomato and Almond Slices with a very tart Vinegarette.

It’s been quite crazy up here in the North East. With everything from traveling to New York for a Gift Show, getting pounded by a snow forecasters dubble “The Blizzard of 2010”, losing power and until now internet service it’s been a pretty hectic couple of weeks.

Through it all, I’ve managed to indulge, over indulge, come back to my senses and to reality for Team RawToLose40. Today, was my first day back to pilates and boy did it show I hadn’t been in the studio since last week.

In the course of these 13 days I’ve stayed off the blog, I did managed to make some great meals.

A Layered Vegetable Salad which takes nothing but imagination to make. Then I consulted the cook book and made the Vegetable Soup Stock because I saw some recipes in there that I wanted to make which required the Soup Stock.

Ingredients:

1Red Bell Pepper

1Yellow/Orange Bell Pepper

5Mushrooms

1/2lb of Green Beans

2Stalks of Celery

1Tomato

1/2Can of Kidney Beans

1Cup of Broccoli

2Carrots

4Green Onions

2Tbls Olive Oil

2Tbls White Wine Vinegar

Paprika

Cumin

Garlic Powder

Dried Parsley

Directions:

Wash and Chop up all the Vegetables and place in a bowl. Add the ingredients for Oil & Vinegar Dressing and toss.

On a more serious note…. These last 2 weeks have been particularly difficult for me to bear. I’ve been eating recklessly and with no cares about the foods I’m eating and what they’ll do to my waiste line and health. Speaking of which, I’ve noticed the scale moving in the wrong direction and my waiste not getting any smaller. I keep saying these words, “that I have to buckle down”, “I have to eat right”, but the words have just not meant anything these past days. I know I have to find the will power in me to move it forward. Hopefully with the availability to pilates again, I will have the power back!

I got up early again Saturday and took a brisk walk around the neighborhood and it was bone chilling windy. I cut the walk a little short, because my ears were killing me from the cold.! 😦

We got ready and went for a ride down to Orlando and during the car trip I drank my Carrot, Beet, Celery, Apple Juice. Once we got down to Orlando, we were both hungry and decided to eat at Bahama Breeze. I ignored all my best judgment and had the Fish Tacos with Tilapia, Avocado, and Tomatoes in a Flour Tortilla. I had three of those, and remember the Bahama Rita’s they make? Yeah, well I drank one of those.!!!

From there, we went to the Outlets to do some shopping… and walk around. We didn’t get home until after 6pm and I didn’t have a chance to drink my other tumbler of Carrot, Beet, Celery and Apple Juice; so I drank it when we got home.

Once at home Mike made his famous Grilled Potatoes and Onions, and I decided to make a Healthy Green Salad. I decided to make that, to counteract my bad choice of having Fish for lunch. Well, if I thought that was bad, I didn’t know that an entire Large Hershey’s Bar with Almonds and Almond Peanut Butter was going to be my downfall.

I forgot we ate Mexican Food on Saturday night! We went to Tyson’s Mall and ate at a place where I had not been in a long time. We went to LaSardie Mexican Restaurant and before anything, I ordered a Margarita. Yum Yum Yum !

After the Margarita I ordered a Guacamole side made fresh at tableside. It’s so yummy, with the Avocado, Tomato, Onion and Cilantro. We ate that with Tortilla Chips for a Starter. For the main course, Mike wanted Fajitas with Shrimp and I ordered a side of Roasted/Grilled Garden Vegetables.  I made sure to sneak a couple shrimp from Mike to make two Tortilla Wraps with my Vegetables.

After dinner, we walked around the mall a little when the food was started to talk back to me. We ended up taking in a movie; this one was the new release of “Leap Year”.  During the entire movie, I was unfortunately very uncomfortable and even through the evening. I didn’t eat much, but whatever it was, it was talking back to me something fierce.!

This time at the movies, no White Cherry Slush drink or Popcorn…. which is good because the last time we went to the movies that’s exactly what I had. It sure does seem like we see a lot of movies… I guess I’m grateful I get that!

Boy, when I woke up it hurt to take my first step out of bed. My calves got such a workout yesterday; I didn’t realize it until I was walking away from the bed. I wanted to hit Pilates again this morning, but thought better of that idea. 🙂

So instead, I did something better (as I type facetiously).  I got a Starbucks Tall Pumpkin Spiced Iced Latte with Soy Milk instead. There’s 5 or 600 calories of sugar and fat I can’t get back!

For lunch I made a Garden Green Salad with a bunch of great Vegetables in it. Today, I added Raisins and an Oil & White Balsamic Vinegar Dressing.

Garden Green Salad:

Ingredients:

1-Bag of Spring Salad

4 Mushrooms

4 Green Onions

1 Avocado

1 Orange Bell Pepper

1 Tomato

1/4Cup Raisins

Directions: Wash the Spinach and Baby Greens from the Salad Mix Bag. Wash and chop up the Vegetables. Add the Raisins and Dressing and serve.  

Oil & Vinegar Dressing:

Ingredients:

2 Tbls. Olive Oil

2 Tbls. White Balsamic Vinegar

I’ve got to say, my experimenting is getting better and better. I had just a little bit the Whole Grain Rigatoni left, so I heated it up and had that as well.

And I hate to say this, or even document it, but I had yet some more morsels of the Danish Assorted Cake Mike bought at Costco. This is what was left of the Assorted Danish Cake after I got my hands on it. Both Mike and I had a part to play in polishing off the tin of Danish. It’s ruining everything I’ve done so far by going to the Pilates classes this week.! But I’m happy to write, Mike ate the last of the Danish, so thankfully there are no more temptations.!!!
