On our drive back down from Canada… from the recent wedding we went to in Orangeville, Mike and I stopped off at this great little farmers market in Pennsylvania. It was a smorgashborge of raw foods…and we were really in the mood to get all the raw foods possible. During the wedding, a man dropped dead of a massive heart attack. All the guests and wedding party was there watching as medical professionals from the crowd started delivering CPR to no avail. It was a wake up call and a shock to everyone there.!

So, we decided to make a change in our lives… and we went crazy at the market buying up tomatoes, english pickles, peppers, butternut squash, onions, sweet potatoes, yellow beans, etc. And once we  arrived home, we  started making these wonderful meals. At the wedding they served a roasted butternut squash soap, that I tried to emulate. It was great!!!

Roasted Butternut Squash Soup

Ingredients:

2tbls extra virgin olive oil

1/2cup diced onions

1/4cup diced celery

1/4cup diced carrots

1 cinnamon stick

sea salt

4cups vegetable stock

1/2tsp coriander

1-1/2 cups roasted winter squash(put in oven to roast for 1-2 hours at 250 degrees)

Directions:

Heat the olive oil in a large sauce pan over medium heat until hot. Add the onion, celery, carrot and cinnamon stick and saute until soft but not brown, about 10 minutes. Season with salt.

Add the vegetable stock and the coriander, and bring to boil. Simmer for several minutes. Stir in squash until smooth, then simmer gently to let the flavors meld, about 10 minutes. Discard the cinnamon stick.

Puree the soup in a blender until smooth. The soup can be made ahead of time, cooled, covered and refrigerated for several days. It will thicken as it cools and may need thinning with stock or water when reheating.

It was a great start to the day… I got up for an early morning Pilates Class here in Potomac, MD. I love the reformer Pilates Classes here!!!! It makes me feel good!!

Breakfast: 1Tsp  Barley Max Powder mixed with 4-8oz of Distilled Water

Then I came home and made my Mid Morning  8oz Juice of Carrot, Cucumber, Celery Juice.

HINT: Celery juice contains organic sodium combined with many minerals the body requires.  

For lunch, I mixed the Barley Max with water and had that 30 minutes before I splurged on 2 pears… that’s what the 14 day eating plan called for on Day 2.

Tuesday Lunch Pears As the day progressed, Mike and I went out and did some errands. Before we left though, I made Mid Afternoon 8oz Juice of  Carrot, Cucumber, Celery Juice for the road… While we were out and about, we realized it was 4pm in the afternoon already. I was starting the get a little hungry and Mike wanted to stop and have a cocktail somewhere local and low key.  

So we stopped off at Wildfire Restaurant in Tysons Corner Mall… where I had a glass of Pinot Grigio and we ordered a Greek Salad with no Cheese. We ended up having a couple of spoonfuls of the salad and then left for home.

For Dinner: I was still a little hungry and wanted to get back on track with the eating, so I mixed my Barley Max and had my drink and proceeded to make Zucchini Salad and Bake a Sweet Potato.

I preheated the oven to 40 degrees and put the Sweet Potatoes in for 4 minutes. And I ate it with some seasonings, or a sweet potato is also great plain!.

Zucchini Salad:

Ingredients:

1 Medium Zucchini

2 Sprigs Parsley

1Carrot

2Green Onions

3Stalks Celery

1/2Red Pepper

2 Tomatoes

2Radishes

Dressing: 2Tbls. Olive Oil

2Tbls White Wine Vinegar

Paprika

Cumin

Celtic Salt

Dried Onions

Directions: Quarter Zucchini lengthwise and slice thinly, chop parsley, grate carrot, thinly slice green onions and tops, dice celery, chop red pepper, cut tomatoes into wedges, finely chop radishes, combine all ingredients and stir gently. Top with dressing and serve with leaf lettuce or on the side alone.

I woke up and went for a brisk walk around the neighborhood. It usually takes me about an hour or 45 minutes… depending on how fast I go. And I think length wise it’s about a 2 mile walk.

THEN…. Mike and I were set to go to the Farmers Market down in Flagler Beach. It’s about a 15 minute drive from the house to the Beach Market… and on our way down I decided to detour over to the Starbucks.

I know! I know!.. I had a craving that came over me and I indulged it. I had a Tall Iced Mocha with Soy Milk… boy did it taste good.!

Then we headed over to the beach and picked up some vegetables. I love coming home after the farmers market, because I fill up the basket in front of the kitchen sink on the counter with all the goodies and there are so many rich, bright colors to look at. I love that!!!!

This afternoon, Mike prepared a mid day feast for us. He made his famous Grilled Potatoes & Onions dish and then he tried a new recipe he got from his friend in California.

Saturday Lunch on LakeIt’s a Tomato, Cucumber & Onion Salad. And then we set the table on the patio and sat outside with a beautiful view of the lake behind the house. I sat across from Mike facing the ocean and saw a light blue calm ocean through the houses on beachside.

Ingredients:

2 Tomatoes

8 Little Cucumbers

1/2Red Onion

4 Mint Leaves

2Tbls. Olive Oil

1 Lime Juiced

1/2 Lemon Juiced

Directions:  Wash and chop Tomatoes and Cucumbers and mix into bowl. Add the Olive Oil and chopped Mint Leaves and squeeze lemon and lime juices into salad and mix well.

Ingredients:

4 Potatoes

2 Sweet Potatoes

1 Onion

Olive Oil

Paprika

Directions: Peel and cut potatoes and onions. Mix into pan and add Olive Oil and Paprika and girll on high heat for 20 minutes or until onions are translucent and potatoes are soft.

Green Garden Salad

It’s tradition in my family to open one present on Christmas Eve… then go to Midnight Mass. This year I went to the Tyson’s Mall in Virginia with Mike so that he could by my gift… and I just opened it.!!!! Donna Karen’s Cashmere Mist Perfume.

So now, we’re getting ready to head out for Midnight Mass (10pm) at the National Cathedral in Washington, D.C. tonight. You have to have a ticket to get into the mass and I didn’t schedule ahead of time, so hopefully we’ll be able to get tickets tonight.?!?!

Both a little stuffed from lunch… we ate around 3pm because we had muffins and croissants this morning.

Lunch was a great Green Garden SaladGrilled Sweet Potatoes with Onions and left over Soup Mike’s Barley & Carrot Soup.
