While we were in Daytona running some errands we came across a new restaurant called Vince Carter. It’s a very spacious piano bar, sports bar and steak restaurant all in one. The food was great too.!!!

I had a glass of Riesling Wine, which I didn’t finish; it was just a bit too soon to be drinking after Saturday’s binge. Then we ordered this great appetizer of Roasted Vegetables (Bell Peppers, Zucchini, Squash and Mushrooms) with a homemade Hummus and Bread.

But when I took the picture, I had already eaten all the Vegetables and bread.

 

 

For dinner I had a wonderful Central Salad, which consisted of

Romaine Lettuce, Artichoke Hearts, Cucumbers, Bell Peppers, Red Onion, Tomato and Almond Slices with a very tart Vinegarette.

I’m really lovin’ this walking every morning. It’s very invigorating. I’m noticing muscles forming and my body getting tighter. It’s not even hard anymore to wake up at 6:30 am or 7:30am to get dressed and hit the road, even with temps in the lower 40’s and 30’s.

The walking is great cardiovascular and it also helps clear my mind to remind me of what I need to do that day.  And Wednesday, I had a Dental Appointment to get my teeth cleaned. Afterwards, I decided to do a little grocery shopping to pick up some odds and ends to last me until Friday before we hit the road for D.C.

I stopped into a couple of little boutiques and bought some things for the house… and headed home for a Green Salad and Minestrone Soup Lunch. I finally finished off the Salad I made earlier in the week (because Mike doesn’t eat the salads I make!) and ate a bowl of My Minestrone Soup with Whole Wheat Bread Slices.

While I was eating, I had the chance to sit down and watch another Old movie on TMC Wednesday Afternoon. This one was a movie with Lucille Ball and Dezi Arnez. Right now, I can’t remember the name of it, but it also had James Mason in it. Cute movie.!!!

For dinner, I had the chance to make this White Bean Soup I had my eye on since the beginning of the week. I’ve wanted to make a soup with some beans in it, and the White Bean Soup sounded really good. I ended up using the White Beans in the Minestrone Soup and again for the White Bean Soup. Another bonus for this recipe was, that I realized I had frozen some Vegetable Soup Stock and needed to use it.

I warmed up the remaining slices of the Whole Wheat Bread and waited until Mike made his Cucumber, Tomato Salad with Lemon Dressing.

Cucumber Tomato Salad w/Lemon Dressing

Mike’s Cucumber, Tomato Salad w/Lemon Dressing:

Ingredients:

4Small Cucumbers

4Tomatoes

1/2Lemon

4Garlic Cloves

Celtic Sea Salt

Directions:

Wash, Peel and chop the Cucumbers and Tomatoes into a bowl. Cut half of a Lemon and squeeze onto the Salad. Mince Garlic Cloves and add Celtic Sea Salt to taste. Mix and Serve. 

White Bean Soup

White Bean Soup:

Ingredients:

2Cups White Beans

2Cups Onions

1Cup Broccoli

1Cup Red Bell Pepper

1Cup Yellow Squash

2Cups Vegetable Soup Stock

Celtic Sea Salt

Basil, Oregano, Rosemary

Directions:

Soak beans overnight and drain. Or drain beans from can, place in pot with soup stock and cook for 1 1/2hours if they are uncooked adding more soup stock or distilled water if needed. While beans are cooking, chop Onions, Broccoli, Squash, and Pepper. Add these vegetables, seasonings and Celtic Sea Salt to the beans and cook an additional hour.

Maybe my ticket was called, when I indulged in some Sherbet Friday night at the movies.?? Or did it start earlier than that, when I was dipping into the Whipped Topping with my Fresh Fruit Desserts???

Anyway you cut it, I’m laid up with back pain making getting around slower than usual.:( And it also means, I’m not hitting the Pilates Gym (since Thursday) getting my usual cardio workout and physical exercise. So eating has somewhat fallen by the wayside.:(

Mike and I have been making some hearty soups to eat, to help beat the colder temperatures and I’ve been tossing my Green Salads. We’re using all the Vegetables and goodies we’re buying at the Costco and Giants Grocery Store, but it’s the extras that are getting me down.

Monday night, I indulged in a bowl of Strawberry Ice Cream.
Sunday afternoon, I indulged in a block of Hershey’s Chocolate with Nuts and a spoonful of Peanut Butter. This was a repeated snack from Saturday Night. I just had the urge for chocolate (and there’s a reason why!)
In addition to all these indulgences I’ve also been over doing it on the Whole Wheat Bread and taking extra servings of all these great soups.

Mike’s Minestrone (Vegetable) Soup:
He called it Minestrone Soup with out the noodles. I didn’t make either, so I’m just going to list the ingredients.
Cabbage
Carrots

Tomato Paste
Diced Tomatoes

Mike’s Barley & Carrot Soup:
He actually told me he got the idea to make this soup after he read my Raw Recipe Cook Book. After reading the Lentils & Barley Soup Recipe and the Carrot Soup Recipe he made this version.

We hit the road again Saturday… on our way to Colorado for Thanksgiving. During the drive we ate lunch in the car…which was the Green Bean Delight and some Roasted Potatoes with Rosemary.

Our first stop in the journey, New Orleans, Louisiana. I’d never been there, nor Mike and we decided to explore the minute we got there. First, we got to our hotel room and freshened up a little. It was only 7:30pm when we got in town so we grabbed a bite to eat at Mr. B’s Bistro. It’s on the corner of Conti & Royal. Since we were in the bayou, I thought I’d have a cup of Seafood Gumbo and a Green Salad. We were really good Saturday night, and only had one cocktail each, I had the Bombay Sapphire & Tonic and then followed that bad with a Fruit Crisp with Sorbet for desert that Mike & I shared… then we hit Bourbon Street.

The next morning…. we walked around the French Quarter some more and went to Cafe Du Monde for some Coffee & Beignets. So sinful!!!!! After visiting the 9th Ward, we left for Dallas. But in Baton Rough we stopped off at the Macaroni Grill where I had their Mediterranean Olives and a Green Salad. We drove through dinner, so I had my left over Roasted Potatoes and Roasted Zucchini & Squash (food I made Friday night.)

We got into Dallas a bit late… so I just cozied into bed and relaxed. Monday, we started early and headed toward Dealey Plaza and drove up Main Street to check out the original Neiman Marcus Store!!! While we were driving around downtown Dallas I ate Mike’s Margarita Pizza leftovers. Three small pieces of pizza for breakfast…NOT GOOD!!! Then we stopped into McDonald’s and I tried the Hot Cafe Mocha.

Around 9:30AM we hit I-35 North to Oklahoma City, OK to visit the Memorial and eat lunch at Brick town. After Mike walked through and experienced the site of the April 19, 1995 bombing site, we picked Crabtown to eat lunch at. Mike wanted a Steakhouse (I couldn’t find one) so we compromised and I had a Green Salad with Fried Onions on top and a cup of Red Beans and Rice.Yum!!!!

We reached Wichita, Kansas by the time we got some sprinkles on the windshield. So I asked Mike to turn the station to the weather forecast… for an update as we drive west on 1-70. Forecasters were predicting more rain, high winds and snow closer to Goodland, Kansas. So, we decided to stop in Hayes, Kansas for the night. I didn’t complain because I knew I was going to finish my Macaroni Grill leftovers and watch Dancing With The Stars-Semi Finals. BONUS!!!
