 I was feeling a little inventive Tuesday afternoon. I took the day to watch old movies on TCM… it’s a hobby I don’t get to do very often. After having a late lunch of Green Salad with Oil&Vinegar Dressing, I decided to make a soup to use up some of the vegetables we had in the refrigerator. We’re going to be going back up to Washington D.C. area again this week.

So I consulted with my cookbook “Recipes for Life” and decided to make a Minestrone Soup with some extra veggies (cauliflower). So I literally threw this soup together and warmed up a loaf of Whole Wheat Bread and we were ready to sit down for dinner.

 

My Minestrone Soup

My Minestrone Soup W/Spinach Noodles

My Minestrone Soup:

Ingredients:

8Cups Distilled Water

1Cup White Beans

1/2 Spinach Pasta

2Tbls Olive Oil

1Onion, Chopped

2Cloves Garlic, Chopped

2Medium Carrots, Chopped

2Stalks Celery, Chopped

2Potatoes, Peeled & Cubed

4Tomatoes, Cubed

1Small Zucchini, Cubed

1/2Green Beans, Sliced

1Cup Cauliflower

1Tbls Dried Basil

1Clove Garlic, Whole

1Tbls Oregano

1Tbls Thyme

Directions:

Rinse and soak White Beans according to the package instructions. Discard water and add fresh water. Cook according to package instructions, omitting salt and set aside.

Cook pasta according to package instructions, omitting salt, drain and set aside.

Heat Olive Oil in a large, heavy pan over medium-high heat. Add Onion, Garlic, Carrots and Celery. Sauté until Onion is translucent. Add Potatoes, Tomatoes, Zucchini, Green Beans, Cauliflower, and water. Reduce heat and simmer 30 minutes. Add White Beans and Pasta. Add more water if soup is too thick. 

In a blender process Basil, one whole clove of Garlic and 1Cup of Soup from the pot until smooth. Return this mixture to the soup. Mix well and serve hot.

I’m in some serious pain today from going to my Pilates classed two days in a row, Wednesday and Thursday after months of not doing it.

So…. I just have to work it off today.. because tomorrow’s another day!!!!
It’s supposed to be another cold day here in Maryland… D.C. area and today Mike’s already got a head start on another Hearty Soup to eat!!!!

I think I might stick with my Minestrone Soup, because his soup has Chicken in it!

Bright and early Tuesday morning, we got up to California time and living. It’s been six months since we were here and it felt good to be here in Santa Monica. Mike and I got up somewhat early and started doing our laundry, hit the dry cleaners and ran around Santa Monica doing errands.

We came home to have Mike’s sister waiting to visit with us. It was nice to catch up, the last time we saw her was the summer and her youngest daughter was getting married. We caught up over a traditional dinner of Soup, Green Salad and White Rice. Afterwards, I was so full, still from the night before that I needed to get out and walk. So Mike’s sister agreed and we walk down to 3rd street and back. It was very energizing and got the juices flowing, so to speak.

Wednesday, I continued the momentum with a brisk run along Ocean Avenue. It was great!!! I followed my almost 1 mile run with another 1mile plus walk around the neighborhood and managed to clear my head from all the negativity others have been talking to me about my new way of eating.. For dinner we went to Mike’s cousins house in Tarzana and we ate Green Salad, Veggie Stir Fry with Tofu, and a Persian dish Gormazabsi with Beef but I picked out the meat. No Wine, I just drank Green Tea. Which wasn’t good, because of the caffeine. But at least at his cousins house, my raw food eating plan was met with excitement and positive encouragment. Simply, because she’s cutting down on her meat intake as well. Boy it’s funny how many people I’m running into who are changing there eating habits, from eating meat to not eating meat anymore!!!!
