This morning I got up and looked outside the window and saw the rain… thought there go my walking plans. All day today, the forescast says it’s supposed to rain.  So I will have to figure out something else for a workout.!!!

But until then, I made my Juice in my VitaMix Juicer.:

Carrot Juice:

Ingredients:

 4 Carrots

 4 Celery

2 Handfulls of Spinach

1 Apple

Directions:

Cleaned and Chopped up Vegetables, add water and ice. Turn on VitaMix on Variable 1 and turn up speed to 10 and mix for 1minute or until desired consistancy.

Barley Max Mix

Barley Max Mix

Then I went ahead and pulled the Barley Max container out of the cupboard and mixed a glass of water with 1 spoonful of the powder.

What Is Barley Max??

BarleyMax is a barley juice product, which is grown from specially selected seeds on fields that are certified organic in a pristine area of the USA.

Alfalfa juice is blended with the barley juice to optimize the nutritional values and achieve the highest macro and trace mineral content possible.

WHY  CHOOSE BARLEY MAX?

BarleyMax has a balanced and richer amount of macro minerals and trace minerals. Higher mineral content gives more cofactors for higher enzyme activity and building blocks for the living cells, tissues and organs of the body.

Vitamin Content – Tests and research indicate higher vitamin content in BarleyMax. This may be due to growing conditions, but also to lower heat and oxygen exposure during processing.

Antioxidant Capacity – Green drink powders are a rich source of antioxidants. In a measure of total antioxidant capacity, this product is the leading green drink juice powder. Levels of beta-carotene are highly dependent on storage time and light exposure.

Looks Fresh – BarleyMax is green. When mixed BarleyMax has a deep, rich green color. Even if it sits on the counter for a while, it does not separate. This indicates true solubility. It mixes easily and stays mixed.

No Maltodextrin – Though we have believed for years that maltodextrin preserves the sensitive nutrients from damage, our recent laboratory tests indicate that this product, over a year old, without maltodextrin, still has most of the enzymatic activity remaining. This is also good news for those who believe they are sensitive to Maltodextrin.

No Brown Rice and Kelp – BarleyMax is a pure juice product whose mineral and micro mineral values are as good if not better without the use of these additional ingredients. No MLM – What more can you say? This is just a straight purchase. You get what you pay for. You will actually get a better product, more servings, and a lower price. It’s simply a great deal.

Tastes Fresh – BarleyMax tastes fresh. The flavor is full of vitality and has an aroma of freshly squeezed juice. If you put BarleyMax juice, beside the freshly squeezed juice, you will have a difficult time telling the juices apart.

BarleyMax Nutritional Content Trace Minerals:

BarleyMax contains 100% organically grown barley juice concentrate and a small amount of enzyme-rich and nutrient-dense alfalfa. Alfalfa plants have roots that reach deep into the earth, drawing out precious trace minerals that are not found in other grasses. Enzymes are the life force of raw foods.

As we age our body’s ability to produce enzymes weakens resulting in poor digestion and elimination leading to acute health issues and chronic illness. We can conserve our enzyme potential by utilizing raw foods rich in enzymes.

I took my Carrot Juice with me, while I did my running around this afternoon, which means I didn’t grab lunch before I left. But good thing happened along the way, one of the magazines I picked up to read at one of my appointments had some really good recipes.

They both looked really good, and were in my requirements of eating only Raw Foods. Plus, I wanted to eat light, because the scale is not my friend these days.!!!! So I decided to make them after I got home. There was the Apple, Pear and Walnut Salad for which I had all the ingredients. And the Whole Grain Rigatoni recipe I had to do some modifications with. The Rigatoni called for Cheese(no cheese please), I didn’t have Crushed Red Pepper or Cauliflower and I didn’t use Rigatoni Pasta. So in place of those two ingredients, I used Cheyenne Pepper, Paprika and Asparagus. And amazingly, they were both easy and fast to prepare. I got home around 3p.m. and the food was ready by 3:30ish.

New Recipes

Apple, Pear and Walnut Salad

Apple, Pear and Walnut Salad:

2Tbls. Red Wine Vinegar

21/2Tbls. Orange Juice

1 Orange, Zested

1/2Cup Raisins

4 Apples (2-3 different kinds)

2 Pears

2/3Cup Walnuts, toasted & chopped

2Tbls. Olive Oil

Sea Salt

Directions:

In a large bowl whisk together vinegar, orange juice, zest and raisins. Core and cube apples and pears. Add fruit and walnuts to a bowl and drizzle with oil. Toss well to combine. Season with salt to taste and refrigerate for one hour before serving.

New Recipes

Whole Grain Riganoti

Whole Grain Rigatoni:

4Tbsp. Olive Oil

1 Medium Yellow or Red Onion, thinly sliced

6 Mint Leaves

1/2tsp. Paprika/Cheyenne Pepper

10 Sticks of Asparagus

1lb. Rigatoni Pasta

1/4Cup Parsley

Directions:

Bring 6y quarts of water to boil in a large pot and add 2 tbsp. salt. In medium saucepan, heat oil; add onion, mint and Paprika/Cheyenne Pepper. Cook until soft, about 5 to 6 minutes. Meanwhile, chop Asparagus into 1/4-inch pieces and throw all the pieces into the saucepan with the onions. Lower heat to medium and cook, stirring regularly for 12 to 15 minutes, until Asparagus is softened. Cook Pasta according to package instructions until al dente and drain in colander. Reserve some of the water and add to the Asparagus, Oil & Onion mix. Toss hot pasta and Parsley with the rest of the mix already in the pan and serve immediately.

For dinner, I had another new recipe. I made Fresh Vegetable Salad mix with an Oil and Vinegar Dressing.

So far so good, we got in around 8:30pm Pacific Time Monday night and ate Salad, Rice, and Okra with Eggplants. I really wasn’t hungry, but I didn’t want to offend Mike’s mother who made the lovely meal for us earlier. It was delicious as always and very similar to my Raw Eating Plan.

Thankfully, Persian food is fruit & vegetable based. Most of the meals made in the culture are stew type meals made with or without some meats. Regardless of what you eat, there’s always white rice on the side.

But here, I will have to really work hard to stay strong and on track, because already, I’m getting the business about not eating meat. I explained to Mike’s mother that I’m eating only Raw Foods, Vegetables and no meat or meat products. She proclaims, you have to eat meat. If you don’t eat meat you get sick…. some of the same thinking and opinion I endured with my girlfriend Kristie. And then, it seemed everyone was against me, because Mike ganged up on me then. But so far, he seems to be sticking up for me and preaching my praises..
