I didn’t wake up early enough to catch the Easter Sunday Sunrise Service on the beach… but I did manage to make the 10am Mass. Which was packed with the entire city of Palm Coast, Florida there. I had to park across the street from the church.. because the parking lot and retail store parking next to the church was all full.

Afterwards… I drove home because Mike and I planned on driving down to Orlando to Bahama Breeze Restaurant for his Easter Sunday Lunch at his second favorite Restaurant.

Of course I had my usual Bahama Breeze Salad and Vegetable Quesadillas w/out Cheese. I did indulge with a Bahamarita Cocktail.

Then we went over to the Outlet Mall to walk it off. Which was great because I felt a bit of headache coming on from the Cocktail. Or at least that’s what I thought it was from. And unfortunately the headache remained even after we got home. I decided we should take a bike ride around the neighborhood… plus I wanted to bike down to Publix Grocery Store for some dinner items. It’s just down the street from us.. maybe a mile, so it’s really easy to bike to. And while we were biking, Mike suggested that it was closed on Easter. When we got there, sure enough, it was closed.

So we turned around and biked back home…. where I had in my head to make a veggie pizza. I was going to use a Whole Wheat Dough, but instead got some frozen Totino’s Cheese Pizzas.

I put them in the microwave for about 2 mins each and was able to peel the Cheese off with a paper towel.

I then added the Kabob Vegetable leftovers from Saturday and put the pizzas in the oven to bake. They were really good,.. and I think healthier than with the Cheese on it.!

Veggie Pizza:

Ingredients:

Broccoli

Red Bell Peppers

Orange Bell Peppers

Onions

No Cheese

Directions: Microwave frozen Pizzas to thaw and place paper towel on the Pizzas to take the cheese off after 2 minute timer.  Place vegetables on Pizzas and place in oven to crisp for another 10 to 20 minutes on 450 degrees.

It’s been tough getting up early to get to the Pilates Classes here in Palm Coast. And this morning, like every morning this week I had good intentions… but didn’t make it to Pilates. Instead, I took a brisk walk around the neighborhood for about an hour. I made Mike get up and get on his new bike and ride along with me. He fizzled out early and went back to the house to take a shower.. but that didn’t stop me.

I really have to make a change… because I’m still stuck at the 170 marker on the scale and I’ve got less than three months to get to the 143lbs. I’m shooting for!!!

Fresh Vegetable Salad

Fresh Vegetable Salad

I love it when I can go out and still eat the foods I was able to eat before I took out dairy, meat and sugar from my diet.

Phad Thai Lunch

Phad Thai Lunch

This afternoon, I met up with a friend of mine at a Thai restaurant. I was still able to have my usual Phad Thai dish. But this time I chose the Vegetable Phad Thai with no Egg.

And the best part, it was still great. Infact, I ate the rest of the left over later in the afternoon before I left the house on some more errands.

This evening, I drank my afternoon juice which I’ve been putting Beats into to help my circulation. I love Beats!!!!

Then I went into the refrigerator and ate the little bit of left over Fresh Vegetable Salad I made the other night. A very light food day today. Something to be proud of.

Tomorrow I’m going to go to the Anytime Fitness Gym to check out there 7:45AM Pilates class. Still no Reformer Class to be found here in Palm Coast.:(

On our way back from Key West… we decided to stop in to The Breaker Hotel in West Palm Beach and have some lunch. It was a perfect idea, because we got there around 2pm (even with the time change!)

We toured the historic hotel and really enjoyed the ceilings in the event rooms. Each room had a different theme and eccentric design. It’s amazing these works of art were done in the early 1900’s.

Of course while we were touring we took some pictures of the ocean front view as boats crossed the landscape. To continue the ocean front theme, we had a window view during our lunch.

They had something new, raspberry lemonade, which I thought was really good. I’m sure it had more sugar in it than I would have liked.

Lunch included a Green Salad and some Fried Zucchini… when I saw that on the menu it reminded me of the Fried Zucchini I had at Carrabba’s and wanted to taste the difference. It was just as good.

Just after 8pm tonight we made it home to a breezy night in Palm Coast. I still had my shorts on from Key West and was freezing while we were unloading the car.  I warmed up and managed to make a quick dinner of Fresh Vegetable Salad while we watched 2 & a Half Men.

After last night’s fried fishplate at the clubhouse down the street, this morning I needed to do some work. So I went to a Pilate’s class at the local gym this morning (Wednesday).  I can’t find any Pilates studio with reformer machines here in Palm Coast. Infact, Yesterday I was looking for a Pilate’s studio and went into the gym for a tour of their facilities. I got the schedule for pilates classes and today was the first class I took. It was good, but nothing like Potomac Pilates.

Afterwards, I went running around and met up with a friend for lunch. I did really well and had the Apple, Cranberry Spinach Salad with a vinegarette dressing. I did indulge though in two pieces of cherry bread.

For dinner, we went to Carrabba’s Restaurant in St. Augustine. That’s about 30 miles north of our house in Palm Coast. I didn’t feel like cooking, nor did Mike so that’s what we did. It was happy hour when we got there, so I had the house Pinot Grigio.

Then the waitperson suggested Fried Zucchini Strips so we tried it. And they were sooooo good.  I ordered a Mediterranean Salad with no cheese and Mike and I split the Penne Franco.  Penne Pasta with Mushrooms, Roasted Tomato with Olive Oil and Seasonings. A lot like the Rigatoni Martino that used to be on the menu.

I haven’t been to pilates since Friday… and waking up this morning at 4:30am to hit the road to Florida seemed like a big enough work out. I actually was able to juice my Spinach, Celery and Carrots Juice for the road, but the Carrots didn’t juice so it was a Spinach and Celery Juice. Tastes Weird!!!

I have to admit, this weekend and Monday was filled with sugar. In addition to all the cupcakes, and wedding cakes I had, I had some Ice Cream Monday afternoon.:(

That’s why, after we made it into Palm Coast I made sure to stop off at Wal-Mart to pick up some fresh fruit so I can make dinner. I put some Sweet Potatoes in the oven to bake while I chopped up some Vegetables to make my Layered Vegetable Salad.Layered Vegetable Salad
