I decided to get up Monday and head to a pilates class… because in addition to eating well, I managed to do some snacking on Stacy’s Pita Chips.

After my workout… I came home and proceeded to make my Mid Morning 8oz Carrot, Apple and Celery Juice for the day.

And I managed to prepare a plastic bag of cut Cantalopes for my Lunch of Melon until satisfied.

By the time we came home Monday afternoon, I noticed a box at the front door and got excited because I knew it was my BARLEY MAX POWDER. So I quickly unloaded everything in may hands and opened up my box and took 1Tsp of Barley Max Powder mix with Distilled Water.

Then I happily made my Mid Afternoon 8oz Carrot, Beet Juice.

30 minutes before Dinner, I FINALLY took 1Tsp of Barley Max Powder mix with Distilled Water.

Dinner plans were a bit recycled … on the menu it called for Spinach Salad, Baked Potato and Raw or Steamed Veggies. So, I decided to eat the remainder of my Garden Salad from Sunday and I put together a little Raw Veggie Salad and turned up the oven to bake my potato!

Baked Potato:

Directions: Preheat oven 425 degrees. Wash potato and place on oven rack for 45 minutes or until potato soft.

Raw Veggie Salad:

Ingredients:

 

1Yellow Bell Pepper

1/2Red Onion

2Green Onions

1Small Broccoli bunch

1Avocado

2Tbls. Olive Oil

2Tbls. White Wine Vinegar

1/2Tsp. Cumin

1/2Tsp. Paprika

1/2Tsp.Dried Onion Flakes

1/2Tsp.Parsley

Directions: Wash and chop veggies. Mix with Olive Oil , Vinegar and seasonings.

Garden Salad:

Ingredients:

2Cups Romaine Lettuce

1/2Cup thinly Sliced Radishes

1 or 2 Green Leaves

1Cup Spinach Leaves

8 or 10 Cherry Tomatoes

1/2Cucumber

Directions: Wash and dry veggies and tear lettuce and spinach into bite-size pieces. Slice radishes, slice onions, add cucumber and tomatoes. Top with desired dressing.

I ended up making a Vegetable Soup Stock because that’s what this evenings Gazpacho Soup called for. So dinner got pushed back 45 minutes, while the Stock cooked up.

Vegetable Soup Stock:

Ingredients:

8-10 Cups Distilled Water

2 Onions, Cubed

3 Cloves of Garlic

2 Carrots

4 Celery Stalk

2 Potatoes with Skin

2 Cups Cauliflower Pieces

2Cups Broccoli Pieces

1/2Cup Parsley

1Bay Leaf

1Tsp Thyme

1Tsp Basil/Mint

Directions: Chop all vegetables into 1-inch pieces. Place in stock pot and add seasonings. Steam saute until slightly tender. Cover with distilled water , bring to boil and reduce heat and simmer over low heat for 45 minutes to an hour. Cool and strain twice. Stock will keep in refrigerator for a week and can be frozen too to be used in soups and stews.

Then I was free to complete the Gazpacho Soup:

Ingredients:

 3Cups Tomatoes

2Cups Cucumber, Peeled

2 Stalks Celery, Diced

1/2Green Bell Pepper, Seeded and Diced

1Red Bell Pepper, Seeded and Diced

3Green Onions or 2Tbsp Dried Onion Flakes

2Tbs Olive Oil

2Tbs Lemon Juice

1/2Tsp Celtic Salt

1tsp dried onion flakes

1tsp parsley

1tsp oregano

1 tsp paprika

1tsp thyme

Directions: Place half of tomatoes and 1/4cup soup stock into blender and puree. Pour into a container and add other vegetables and olive oil, lemon juice and seasonings. Cover and refrigerate before serving… served cold.

While I was waiting on the Vegetable Soup Stock and the Gazpacho Soup to be made, I worked on the Hallelujah Acres Vegetable Salad:

Ingredients:

Small Broccoli Florets

Small Cauliflower Florets

Finely Diced Celery

Finely Chopped Sweet Onion or Scallions

Finely Diced  Red or Yellow Bell Peppers

Peel and Chop Avocado

Top with Grated Carrots

Squeezed Lemon Juice

Seasonings

Directions: Wash Green Leaf Lettuce and Spinach Lettuce and add Vegetable Ingredients along with dressing and serve.

I did a lot of snacking today… I guess I thought I deserved it after my Pilates class this morning.!?!?

I took a small bowl of Almonds, Cranberries, and Raisins Trailmix… then I got a taste for some of my favorite Hummus. I found a box of Ritz crackers… the new ones that are mixed the ritz cracker and pretzel. I had probably about 20-30 crackers and several spoonfuls of Hummus.

Then Mike got back from Jacksonville, where he dropped off his son at the airport and picked me up a new Beach Cruiser Bike. I took it for a spin around the neighborhood, and I really need to get used to it. It’s not really the bike I want.. plus I still have the bike at Sears that needs to be picked up. There’s been one delay after another getting it delivered to the Daytona Beach Mall and then they have to assemble it still.

After the bike ride…which was so nice we came home and I made a Fresh Vegetable Salad again with an Oil and Vinegar Dressing.

Saturday night, we went to go see the movie “She’s Out Of My League”… Mike’s son wanted to get something at the concession stand.

And so I graciously obliged and got a little something for myself too… Almond covered M&M’s.

The M&M’s with maximum blocking power… I was bloated the minute Mike and I finished the bag off until tonight (Sunday).

But that didn’t stop me from getting up this morning to take my early morning brisk walk!!! I felt really really really bloated doing it, but I knew it had to be done if I wanted any kind of relief.

So… we ended up going down to Orlando for lunch at Bahama Breeze Restaurant again.

It’s turning into our Sunday afternoon thing of  St. Thomas Crab Claws, Breeze Salad with Cheese less Quesadillas and Chicken Kabobs. This time, we added Coconut Onion Rings to the mix (I was overwhelmed with the desire for them). Luckily, Mike’s son was there to help eat the Onion Rings. I managed to eat only 3 of them… yeah!

Again, we ran into rain while we were down there, so it put a little damper on our shopping trip to the outlets. But I did manage to pick up some good buys and some red-hot ticket items. Because of the rain, it seemed like we were on the road forever… and combined with all that shopping made for some hungry bellies on the way home.

So we stopped off at a gas station along the interstate and I got some Trail Mix filled with some goodies: raisins, almonds, sunflower seeds and some other goodies.

Ingredients:

1 Pkg Ground Turkey

3 Potatoes

1 Egg

1 Onion

Tumeric

Pepper

Salt

Directions: Boil potatoes to a soft touch, drain and  peel then add into bowl with Chopped Onion, Ground Turkey and seasoning. Mix the ingredients together and mold into patties and cover in flour. Then place patty cutlets into Coleman Grill with Olive Oil until nice and brown.

Turkey Cutletsfor dinner and I just put out my Fresh Chopped Vegetables I made Saturday and put the left overs from lunch on the table to munch on.

Fresh Chopped Vegetables:

Ingredients:

Broccoli

Mushrooms

Green Onions

Red Bell Peppers

Carrots

Celery

Directions:  Chop up all the vegetables in order listed… and mix into a bowl. Leave the vegetables clean with out any dressing. Add your own at the table, I used Oil & Vinegar with some Paprika, Dried Onion, Dried Parsley seasoning.

It’s amazing how much junk you think you can get away with kids and company around.. and it’s not something I enjoy admitting to either. Because just at dinner, Mike’s son was so proud of his efforts to help his dad with the cutlets he gave me one to try. So I had to try it, even though I didn’t want to. And the M&M’s… that was just me thinking like a kid.! Every time there’s someone around I do bad, as if I needed an excuse, because I can make bad decisions all by myself.

On our way back from Key West… we decided to stop in to The Breaker Hotel in West Palm Beach and have some lunch. It was a perfect idea, because we got there around 2pm (even with the time change!)

We toured the historic hotel and really enjoyed the ceilings in the event rooms. Each room had a different theme and eccentric design. It’s amazing these works of art were done in the early 1900’s.

Of course while we were touring we took some pictures of the ocean front view as boats crossed the landscape. To continue the ocean front theme, we had a window view during our lunch.

They had something new, raspberry lemonade, which I thought was really good. I’m sure it had more sugar in it than I would have liked.

Lunch included a Green Salad and some Fried Zucchini… when I saw that on the menu it reminded me of the Fried Zucchini I had at Carrabba’s and wanted to taste the difference. It was just as good.

Just after 8pm tonight we made it home to a breezy night in Palm Coast. I still had my shorts on from Key West and was freezing while we were unloading the car.  I warmed up and managed to make a quick dinner of Fresh Vegetable Salad while we watched 2 & a Half Men.

Pineapple Salsa

OMG!!! I can’t believe that I did this.

Mike and I went to my girlfriend Robin’s house for a house warming she was having Saturday Afternoon.  So, I got up with every intention of making some salsas with the VitaMix to take to her party!

I made the Tropical Avocado Salsa – Again. Which turned out even better the second time???

Plus, I made a Pineapple Salsa:

Ingredients:

1Can Cut Pineapples

2Tbls. Olive Oil

1/2Small Onion, Peel

1/2Orange Bell Pepper

2Tbls. Cilantro

1/2 Lime, peeled

1/2Tsp salt

1/4 Jalapeno Pepper

Directions:

Oh they tasted soooo good. I also brought along some Tortilla Chips and some Ritz Crackers for dipping. After finishing the dips and running some last minute errands, we arrived at Robin’s house around 1pm.

I met Robin’s parents, her in-laws; it was such a lovely time. And Robin had out her appetizers (my salsas) and then a lunch which consisted of grilling hamburgers and hot dogs, shrimp gumbo, and a big Strawberry Salad. I had every intentions of eating. In fact I was snacking on my dips that I had brought. But as the afternoon went on, my glass of wine kept getting filled (Not once was my glass of wine empty for more than 10 seconds) and before I knew it, it was around 7 or 8 pm in the evening. 

Well, Mike had to pull me away from the festivities which had winded down to an almost screeching halt and drive home. Needless to say, I jumped right into bed and passed out when I got home.

The next morning, I woke up feeling sluggish and brandishing a headache from the night before. I didn’t do much, but watch movies and drink some Fruit Smoothies, Juice and water. I did have enough energy to get up and make my own version of a Strawberry Salad for lunch and for dinner, Mike got take out from The Outback Restaurant. I ordered a Baked Potato and had some more of my Strawberry Salad.

1Cup Cut Mushrooms

3Green Onions

6Strawberries Fresh Cut

Oil & Vinegar Dressing

Directions: Wash, cut up all vegetables and fruit and mix into salad bowl. Pour Oil & Vinegar on individual serving.

I haven’t been to pilates since Friday… and waking up this morning at 4:30am to hit the road to Florida seemed like a big enough work out. I actually was able to juice my Spinach, Celery and Carrots Juice for the road, but the Carrots didn’t juice so it was a Spinach and Celery Juice. Tastes Weird!!!

I have to admit, this weekend and Monday was filled with sugar. In addition to all the cupcakes, and wedding cakes I had, I had some Ice Cream Monday afternoon.:(

That’s why, after we made it into Palm Coast I made sure to stop off at Wal-Mart to pick up some fresh fruit so I can make dinner. I put some Sweet Potatoes in the oven to bake while I chopped up some Vegetables to make my Layered Vegetable Salad.Layered Vegetable Salad

1/2 Can of White Beans

1 Avocado

It’s been quite crazy up here in the North East. With everything from traveling to New York for a Gift Show, getting pounded by a snow forecasters dubble “The Blizzard of 2010”, losing power and until now internet service it’s been a pretty hectic couple of weeks.

Through it all, I’ve managed to indulge, over indulge, come back to my senses and to reality for Team RawToLose40. Today, was my first day back to pilates and boy did it show I hadn’t been in the studio since last week.

In the course of these 13 days I’ve stayed off the blog, I did managed to make some great meals.

A Layered Vegetable Salad which takes nothing but imagination to make. Then I consulted the cook book and made the Vegetable Soup Stock because I saw some recipes in there that I wanted to make which required the Soup Stock.

Ingredients:

1Red Bell Pepper

1Yellow/Orange Bell Pepper

5Mushrooms

1/2lb of Green Beans

2Stalks of Celery

1Tomato

1/2Can of Kidney Beans

1Cup of Broccoli

2Carrots

4Green Onions

2Tbls Olive Oil

2Tbls White Wine Vinegar

Paprika

Cumin

Garlic Powder

Dried Parsley

Directions:

Wash and Chop up all the Vegetables and place in a bowl. Add the ingredients for Oil & Vinegar Dressing and toss.

On a more serious note…. These last 2 weeks have been particularly difficult for me to bear. I’ve been eating recklessly and with no cares about the foods I’m eating and what they’ll do to my waiste line and health. Speaking of which, I’ve noticed the scale moving in the wrong direction and my waiste not getting any smaller. I keep saying these words, “that I have to buckle down”, “I have to eat right”, but the words have just not meant anything these past days. I know I have to find the will power in me to move it forward. Hopefully with the availability to pilates again, I will have the power back!

My friend and her daughter got here after 1am. It was a long drive for them and a long wait for us. Staying up that late is exhausting. So needless to say, I didn’t want to wake up Saturday morning.

But we did get up are 8am.. and I got out my Almond Butter and warmed up some Whole Wheat Bread and put it out on the table, while Mike made his famous scrambled eggs.  I made the Almond Butter the night before and couldn’t wait to get my hands on it… and when I did it was delicious. I can’t believe it was so good on the bread like that.

2Cups Almonds

1Tbls Honey

1/2Bottle of Water

Directions:

Soak Almonds overnight in water. Put Almonds into food processor, add honey and water as mixture blends together into a chunky paste.

Once we cleaned up from breakfast, we jotted down to D.C. to do a little sight seeing with my girlfriend and her daughter.

We actually had a chance to see the President leave from the Whitehouse.. or at least that’s what we thought was going on out there with all the secret service guys.

Then, we headed over to New York Avenue to do a little wholesale shopping with the store owners there. It’s a great place to buy stuff at bulk/discount prices.

It was getting later in the day and  that time, we were all hungry. We made it back to the house around 3pm and we unloaded all our bags and I started warming food up and putting finishing touches on some things. I asked Liz to set the table and then we all sat down to Mike’s Roasted Eggplant & Potato and my Stuffed Avocado dish, Almond Cheese, and for dessert we had my famously new recipe for Strawberry Pie.

Stuffed Avocado:

Ingredients:

2Ripe Avocadoes

1/4Cup Green Onions

2Tsp. Fresh Lemon Juice

2Tbsp. Olive Oil

1/4Cup Carrot

1/4Cup Celery

1/4Cup Beet

Directions:

 Mince Green Onion, shred Carrot and beet and finely dice celery. Peel avocados, cut in half and remove pit. For each serving, place 2 halves of avocado on a bed of mixed greens and stuff with vegetables. Combine lemon juice and oil and drizzle over stuffed vegetables.

Almond Cheese:

Ingredients:

1Cup Distilled Water

1/2Cup Red Bell Pepper

1/4Cup Nutritional Yeast Flakes

1/2Tsp. Garlic Powder

1/2Tsp. Sea Salt

2Tsp. Onion Flakes

4Tbps. Agar Agar Flakes or Arrow Root Powder

1Cup Almonds

1Tbsp Tahini or 2Tbsp. Sesame Seeds

2Tbsp. Lemon Juice

1Tsp. Paprika

1Tbsp. Vegetarian Parmesan Cheese

Directions:

Place water and almonds into blender and process until a creamy milk consistancy is reached. Pour into saucepan, Mix in agar agar(or arrow root powder) and bring to a boil. Immediately, reduce heat and simmer for 5 minutes or until agar agar (or arrow root powder) is completely dissolved. Place mixture in blender, and add remaining ingredients and blend until smooth. Scrape sides until all ingredients are  mixed well. Pour into container and refrigerate until set. This cheese can be sliced in the size you prefer.

Fresh Strawberry Pie:

Ingredients:

Pie Shell:

1Cup Raw Almonds, Soaked Overnight

1Cup Soft, Pitted Dates

1/2Tsp. Vanilla

Soak almonds in distilled water for 12 hours. Grind the nuts in a food processor until finely chopped. Add the dates and vanilla and blend well. Press thinly into a pie plate (from center to the outside rim) to form the shell.

Binder:

7 or 8 Large Ripe Strawberries

5 Soft Dates, Pitted

2Bananas, ripe

1Tbsp. Fresh Lemon Juice

Blend all binder ingredients in food processor or blender until well mixed.

Fruit Filling:

Cut 2 pints of fresh strawberries into quarters, and fold into binder and fill shell. Decorate with approximately 1/2 pint of quartered strawberries. Cover with plastic wrap and store in refrigerator. Chill before serving.

And that was it for both lunch and dinner. I did however make Almond Milk with the left over Almonds Soaked in water. The ingredients are easy, but the process is a bit time consuming.

1Cup Almonds, Soaked Overnight

1/2Bottle Water

2Tbls. Vanilla

4 Pitted Dates

Directions:

Drain almonds from water and peel skin off of the nuts. Place the nuts into food processor and blend pouring in the Vanilla and Dates and water to keep substance smooth. Strain ingredients through a cheeseclothe until liquid milk comes through. Keep refrigerated.

I broke from the norm of eating ONLY RAW FOODS today. Mike made Turkey Cutlets with Potatoes & Onions for lunch. I hadn’t eaten cutlets since before I made my change to Eating Raw Foods and it was good to eat this fresh, healthy meal. The meal I thought wasw healthy, because of the vegetables in the Cutlets and the Salad, and the turkey meat is high in Protein and a much better meat for me.

4Onions

6Potatoes

1Pkg Ground Turkey

4Tbls Olive Oil

Tumeric

Paprika

Sea Salt

Pepper

Directions:

Boil Potatoes in water and peel skin. While Potatoes are boiling, peel & chop Onions and then combine package of ground Turkey Meat with Potatoes and Onions. Begin hand mixing the ingredients and add seasonings. Mold the ingredients in to flat, round patties and place into grill with Olive Oil and add Garlic Cloves and grill for 15 minutes or until meat is cooked.

I actually got the opportunity to participate in this lunch creation by molding the ingredients in to patties.  It’s a good thing I got my Pilates workout this morning (Wednesday).

While the Turkey Cutlets were grilling, I decided to make a Garden Salad  with an Oil & Vinegar Dressing to go along with the Cutlets. This Golden Balsamic Vinegar I’m using tastes so good paired with the Olive Oil, I don’t need any kind of seasoning in the Dressing. And I had a bag of Baby Green Lettuce that needed to be used… so there you go!

Ingredients:

1Bag of Baby Greens

1Red Bell Pepper

1 Yellow Bell Pepper

1 Avocado

1Small Bunch of Broccoli

3Green Onions

1/2Can of Chick Peas

4Mushrooms

Directions:

Clean and Chop up all the Vegetables and add to washed lettuce and serve. Add Oil & Vinegar to taste.

Yesterday and today (Wednesday), I did pretty well with not eating sweets or junk… and it really feels good to eat fresh and raw. But I can’t say that was true for dinner time.

I got my Garden Green Salad out for dinner and warmed up the Grilled Onions, Peppers & Zucchini  I made Sunday and ate that for dinner. I added the Chick Peas to the Salad, because I realized I had the open can in the refrigerator. A great meal, filling and I didn’t crave anything for a while. It may have been because I had some Hummus and Sangek Bread afterwards.

But as the night progressed… while we were watching Wednesday Night Comedy on ABC, I wanted a Chocolate Dove Bar. That’s 260 calories of useless sugar and chemicals! I don’t know why I can’t keep my hands off this stuff? It’s not helpfull that Mike goes out and buys it either.!
