I’ve decided to walk around the neighborhood when I don’t take a Pilates class… a keep doing the weights 3-4 times a week along with everything.  And I plan to do the best I can with my eating with this schedule, because it’s crunch time. June 2nd is just around the corner and I still have a good 30lbs to go.

I had a couple of gardening things to do in front of the house and while I did that, Mike cleaned out the cars. And of course, while I was on my walk, Mike made a Meat dish for his lunch. I suggested we sit outside again on the patio, and started setting the table for lunch. I decided to have my Fresh Vegetable Salad from Thursday Night and the Grilled Potatoes & Onions from Friday for lunch.

I did have a couple of servings of the Grilled Potatoes & Onions… simply because it was so good and I had a walk earlier.:(

I did a lot of snacking today… I guess I thought I deserved it after my Pilates class this morning.!?!?

I took a small bowl of Almonds, Cranberries, and Raisins Trailmix… then I got a taste for some of my favorite Hummus. I found a box of Ritz crackers… the new ones that are mixed the ritz cracker and pretzel. I had probably about 20-30 crackers and several spoonfuls of Hummus.

Then Mike got back from Jacksonville, where he dropped off his son at the airport and picked me up a new Beach Cruiser Bike. I took it for a spin around the neighborhood, and I really need to get used to it. It’s not really the bike I want.. plus I still have the bike at Sears that needs to be picked up. There’s been one delay after another getting it delivered to the Daytona Beach Mall and then they have to assemble it still.

After the bike ride…which was so nice we came home and I made a Fresh Vegetable Salad again with an Oil and Vinegar Dressing.

Fresh Vegetable Salad:

Ingredients:

1Cup Snap Peas

1 Red Bell Pepper

4Sticks Asparagus

3 Green Onions

1 Avocado

3 Sticks of Celery

2 Carrots

5 Mushrooms

2Tbls Olive Oil

2Tbls White Wine Vinegar

Cumin

Paprika

Dried Onion Flakes

Garlic Powder

Parsley

Directions: Wash and Cut Vegetables and mix into bowl. Add Oil & Vinegar and Seasonings.

I love how all the vegetables in my salads and dishes just sparkle with bright, rich colors. The minute I sprinkle Olive Oil on the veggies, they just seem to come alive. And I know that once I eat them I will come alive with nutrition and healthy cell rejuvenation!!!!

So, this morning I started with a brisk hour-long walk in the neighborhood. It was a great feeling after the food I ate last night.. I’m still kinda getting straight from the Hibachi Meal.!!!

Then we let Mike’s son take a ride on Mike’s bike around the neighborhood, while Mike and I took a walk down to the clubhouse. There, we waited for his other kids to come over to have lunch.

We decided to grill some beef burgers, turkey burgers, and I made the token vegetable dishes. First on got crackin with the Grilled Vegetables:

Ingredients: Red & Yellow Bell Peppers

Zucchini

Asparagus

Mushrooms

Olive Oil

Dried Onion Flakes

Paprika

Cumin

Celtic Salt

Directions: I chopped up some zucchini, Bell Peppers Asparagus, and Mushrooms and put them into some Tin Foil paper and sprinkled some Olive Oil and Seasoning on the pile of vegetables and handed it off to Mike to put on the Grill. He kept it on the Grill shelf for about 15 minutes.

Then I chopped up Vegetables for another Fresh Vegetable Salad I’m saving for either tomorrow of later today!!

I also made a Cucumber & Tomato Salad and brought out all the stuff to eat on the patio. Before the meal, we were all munching on Hummus and Stacey’s Chips.

Ingredients:

Cucumber

Olive Oil

Dried Parsley

Cumin

Paprika

Directions: Chop up the cucumbers and tomatoes and sprinkle with 2 tbls of Olive Oil, Dried Parsley and seasonings.

Now, we’re relaxing and watching some TV…. I think I may have had too much Hummus and Chips.  But, hopefully my afternoon juice will help wash things down!!!

Speaking of juicing…. I ran out of Carrots yesterday and made juice with Asparagus, Celery and Apples. It was really good… it tasted different but good!!!

Another lunch of Fresh Vegetable Salad and Asha Reshteh and then up to Jacksonville to pick up Mike’s son.

But before we hit the airport, we went to have dinner with Mike’s other son at Wasabi a Japanese Steakhouse. We had met up with him several weeks ago at the same restaurant.

And we had the same thing… Filet and Shrimp Hibache…. I of course had the vegetables, Zucchini, Squash, Carrots, Onions, and Broccoli. Before hand I asked for a Seaweed Salad and I had cold Sake.  I also asked the chef to make the Rice with no Egg. But I couldn’t say anything about all the butter he used… because there’s a table full of people waiting for him to cook for them.

This morning I can say, Mike and I went for a walk around the neighborhood together. It’s something we haven’t done in a while, and it’s something Mike did on his brand new bike. He’s like a kid in a candy shop after buying his used trail bike. 

Since I haven’t been able to get a Pilates schedule, I’ve decided to walk around the neighborhood for my exercise. This weekend I got back into the groove!!

After my walk, got home to take a shower and hit the road to Orlando. Mike wanted to get to his favorite restaurant, Bahama Breeze for his Chicken Kabobs and St. Thomas Crab Claws.

 I have to admit, I did have 3 of those Crab Claws before my Breeze Salad and Cheese less Veggie Quesadillas arrived. I was proud of myself, usually I get my Bahama Rita drink and this time I ordered Water with a Lemon.

Then we battled the rain to head over to Whole Foods where I got some Dried Cranberries, Raisins and some new TPV. Mike wanted to return the Honey I picked up a while back because it started crystallizing (not a good sign).

After engaging the navigation system, we found a Costco down in Orlando and picked up some more Agave and some other goods and headed home in the rain. By the time we got home, the rain had stopped and we were able to get all the groceries out without getting soaked.!!!

Dinner was a mix of my Fresh Vegetable Salad, which I packed full of the leftover Kidney Beans and left over Chick Peas from the other day. Mike made his Potato Medley Grill.

After dinner we did the usual 60 Minutes and then Desperate Housewives. But afterwards, ABC aired something a little different. A show with Jamie Oliver called “Food Revolution”, where he goes to Huntington, W.V. and tries to reteach the way these people eat. Huntington was rated the city with the most obese people and city with horrible eating habits in the U.S. Very interested how the schools, families and community are killing themselves with all the fried, processed foods they’re eating.

The forecast for Saturday was so gorgeous; we decided to do some replanting of the plants that were killed in the winter freeze. Calm, 75, and Sunny, that was the beautiful day we were working with. I dressed in my sweat suit and by the afternoon I was getting hot as I repotted plants and did some heavy lifting of those big pots, moving them back in the house from gardening central.

We stopped for lunch which was Mike’s Minestrone Soup. 

Then we went back out to finish up the work. Mike went to the store to buys some more little plants for his project, and while he was out he stopped at the local bike shop where he saw a deal on two used bikes. Well, he had before 5pm to make his decision. So he came home and told me about it.

As I was wrapping up the gardening, Mike had made me an Orange, Pineapple Smoothie. After I had a chance to relax a bit, we headed down to the bike shop to take a look at these bikes. I thought this would be great to get some biking into my exercise mix. But when we got there, the bike was not what I was looking for. I wanted a Beach Cruiser bike to take leisurely bike rides through the neighborhood. So Mike bought his bike and we went looking elsewhere for a beach cruiser for me. After checking out a couple more bike shops, we hit Sears where we found a beach cruiser for me. We’re picking it up wednesday! !!!

I love it when I can go out and still eat the foods I was able to eat before I took out dairy, meat and sugar from my diet.

This afternoon, I met up with a friend of mine at a Thai restaurant. I was still able to have my usual Phad Thai dish. But this time I chose the Vegetable Phad Thai with no Egg.

And the best part, it was still great. Infact, I ate the rest of the left over later in the afternoon before I left the house on some more errands.

This evening, I drank my afternoon juice which I’ve been putting Beats into to help my circulation. I love Beats!!!!

Then I went into the refrigerator and ate the little bit of left over Fresh Vegetable Salad I made the other night. A very light food day today. Something to be proud of.

Tomorrow I’m going to go to the Anytime Fitness Gym to check out there 7:45AM Pilates class. Still no Reformer Class to be found here in Palm Coast.:(

On our way back from Key West… we decided to stop in to The Breaker Hotel in West Palm Beach and have some lunch. It was a perfect idea, because we got there around 2pm (even with the time change!)

We toured the historic hotel and really enjoyed the ceilings in the event rooms. Each room had a different theme and eccentric design. It’s amazing these works of art were done in the early 1900’s.

Of course while we were touring we took some pictures of the ocean front view as boats crossed the landscape. To continue the ocean front theme, we had a window view during our lunch.

They had something new, raspberry lemonade, which I thought was really good. I’m sure it had more sugar in it than I would have liked.

Lunch included a Green Salad and some Fried Zucchini… when I saw that on the menu it reminded me of the Fried Zucchini I had at Carrabba’s and wanted to taste the difference. It was just as good.

Just after 8pm tonight we made it home to a breezy night in Palm Coast. I still had my shorts on from Key West and was freezing while we were unloading the car.  I warmed up and managed to make a quick dinner of Fresh Vegetable Salad while we watched 2 & a Half Men.

Ingredients:

1Red Bell Pepper

3Green Onions

1Small Bunch of Broccoli

1Carrot

2Tbls. Olive Oil

2Tbls. White Wine Vinegar

Directions: Wash and chop up the vegetables in a bowl. Mix Olive Oil, Vinegar and seasonings in with vegetables and serve.

For dinner, I made Mike’s son Roasted Potatoes and Onions with some Paprika, Parsley and other Seasonings. I have to say, it was really good for no other dinner preparations. I thought I’d pour some Olive Oil into a Sauté Pan and threw in the cut up Potatoes with their skin still on. I did the Potatoes first, because it takes them longer to cook. Then I added the Onions. But the Potatoes were falling apart and kind of burning to the bottom of the pan. So I turned down the heat and added some more Olive Oil and then I added the Seasonings and let the Onions cook. 

Potatoes & Onions:

Ingredients:

6 Medium Potatoes

1 Medium Yellow Onion

3Tbls. Olive Oil

1/4 Cup Parsley

1/4 Cup Paprika

1 Tsp. Cayenne Pepper

Sea Salt

Directions:

Wash and cut Potatoes into 1/4-inch cubes then slice Onions into thin slices. Heat Olive Oil in Sauté Pan and add Potatoes, sliced Onions, then seasonings. Let ingredients soften and meld together. 

While I was making the Potatoes and Onions, I decided to have the left over Fresh Vegetable Salad I made the night before. I also had some Whole Grain Rigatoni from the day before. BUT much to my surprise, the Fresh Vegetable Salad didn’t keep very well. The Vinegar in it became too overpowering, making it too sour and tart to eat. So I had some of the Potatoes & Onions.

For dessert, I drank some Carrot Juice with a couple more pieces of Danish! I can’t believe it… just because this food is in the house I feel I need to eat it. This is not right!!!!!

I took my Carrot Juice with me, while I did my running around this afternoon, which means I didn’t grab lunch before I left. But good thing happened along the way, one of the magazines I picked up to read at one of my appointments had some really good recipes.  

They both looked really good, and were in my requirements of eating only Raw Foods. Plus, I wanted to eat light, because the scale is not my friend these days.!!!! So I decided to make them after I got home. There was the Apple, Pear and Walnut Salad for which I had all the ingredients. And the Whole Grain Rigatoni recipe I had to do some modifications with. The Rigatoni called for Cheese(no cheese please), I didn’t have Crushed Red Pepper or Cauliflower and I didn’t use Rigatoni Pasta. So in place of those two ingredients, I used Cheyenne Pepper, Paprika and Asparagus. And amazingly, they were both easy and fast to prepare. I got home around 3p.m. and the food was ready by 3:30ish.

New Recipes

Apple, Pear and Walnut Salad

Apple, Pear and Walnut Salad:

2Tbls. Red Wine Vinegar

21/2Tbls. Orange Juice

1 Orange, Zested

1/2Cup Raisins

4 Apples (2-3 different kinds)

2 Pears

2/3Cup Walnuts, toasted & chopped

2Tbls. Olive Oil

Sea Salt

Directions:

In a large bowl whisk together vinegar, orange juice, zest and raisins. Core and cube apples and pears. Add fruit and walnuts to a bowl and drizzle with oil. Toss well to combine. Season with salt to taste and refrigerate for one hour before serving.

New Recipes

Whole Grain Riganoti

Whole Grain Rigatoni:

4Tbsp. Olive Oil

1 Medium Yellow or Red Onion, thinly sliced

6 Mint Leaves

1/2tsp. Paprika/Cheyenne Pepper

10 Sticks of Asparagus

1lb. Rigatoni Pasta

1/4Cup Parsley

Directions:

Bring 6y quarts of water to boil in a large pot and add 2 tbsp. salt. In medium saucepan, heat oil; add onion, mint and Paprika/Cheyenne Pepper. Cook until soft, about 5 to 6 minutes. Meanwhile, chop Asparagus into 1/4-inch pieces and throw all the pieces into the saucepan with the onions. Lower heat to medium and cook, stirring regularly for 12 to 15 minutes, until Asparagus is softened. Cook Pasta according to package instructions until al dente and drain in colander. Reserve some of the water and add to the Asparagus, Oil & Onion mix. Toss hot pasta and Parsley with the rest of the mix already in the pan and serve immediately.

For dinner, I had another new recipe. I made Fresh Vegetable Salad mix with an Oil and Vinegar Dressing.

Fresh Vegetable Salad:

1 Orange Bell Pepper

5 Sticks of Asparagus

1 Avocado

1 Tomato

4 Small Pickle Cucumbers

1/2 Cup Chick Peas

Oil & Vinegar Dressing:

2Tbls. Olive Oil

2Tbls. White Wine Vinegar

Sea Salt

Coriander

Paprika

Cheyenne Pepper

Dried Onion Flakes

Directions:

Chop up Pepper, Avocado, Asparagus, Tomato, and Cucumbers into 1/4-inch cubes or bite sized pieces. Add Oil, Vinegar, Chick Peas, and Seasonings and toss to coat the vegetables.
