I had an urge to eat some Ice Cream last night after  I blogged… but I stopped myself from doing so. And this morning, when I woke up I felt great. Infact, I got up early and went to the gym for a pilates workout. A workout that was very rigorous.. I moved and worked muscles that had been laying dormant.

Then I came home to Mike making a Vegetarian Lazagna. We bought some Whole Wheat Lazagna Pasta yesterday, so he had to use them along with some cut up Eggplants he froze a couple of weeks ago.

He entrusted me with the task of looking after the Lazagna and I managed to burn the bottom of it. Mike set up the Lazagna in the Coleman Grill outside, and when I went to check on it, I was not sure how he thought the top would get cooked. So when I went to check on the food again, the bottom was burnt and the top still needed to be done. So I took it off the grill and brought it inside so Mike could take care of it when he returned. 😦

Even though the Vegetable Lazagna was burnt on one side…and didn’t look much like a Lazagna… it still was good.

Vegetable Lazagna:

Ingredients:

Whole Wheat Lazagna Pasta

Eggplant, thinly sliced

Tomato Paste

Olive Oil

Directions: Layer bottom of pan with Lazagna Pasta. The next layer is Eggplant covered with Tomato Paste and layer the top with Lazagna Pasta. Bake 450 degrees for 1 hour.

I woke up and didn’t have the slightest urge to go for a walk around the neighborhood, or even get up and out to take a Pilates Class. I just shrugged the early morning away!!!

I did get on the scale this morning and I went from 172lbs. to 171lbs… and I felt good about myself. And for some reason I had the idea to get a Venti Mocha Frappacino.

 I walked into Starbucks on my way out to run errands and Sari still recognized me after 6 months of not visiting. I didn’t think she was going to recognize me, but I’m glad she did. It made the purchase all the better.

Then for lunch, Mike and I sat down for some Fresh Vegetable Salad and Ash Reshteh. I had a scoop of each, which I probably could have gone a little easy on!!

Afterwards, we went to St. Augustine in search of my Beach Cruiser. It turns out Sears didn’t have my bike in yet, so I tood the opportunity to shop around. But I didn’t find anything. 😦

Then we stopped into Carrabba’s… big surprise!!!!

I had my usual Happy Hour White Wine and Insalata Fiorucci Salad… Mixed field greens tossed with marinated artichoke hearts, roasted red bell peppers and grilled eggplant in vinaigrette, topped with a hazelnut goat cheese medallion. NO CHEESE & OIL AND VINEGAR DRESSING.

Yesterday was bad!!!  I ate way too much food. For lunch I had a hearty helping of my Fresh Vegetable Salad and another hearty helping of Mike’s Asha Reshteh.

Asha Reshteh Ugh!! I was so bloated after that meal, after which I vowed I wasn’t going to eat anything for dinner.

But as luck would have it, Mike made a dish with Okra, Brussels Sprouts, Zucchini and Eggplant. He actually tossed all the vegetables in flour and put it on the Coleman Grill he has.

Mike’s Okra:

Ingredients:

Okra

Brussels Sprouts

Zucchini

Eggplant

Flour

Olive Oil

Directions:

Cut up the vegetables and wash, blot with paper towel and roll into a cup of flour. Fry in a pan/grill with Olive Oil until tender. 

Red Bell Pepper SaladThen he finely chopped up some Red Bell Peppers and Orange Bell Peppers with Cucumber for a Salad. He added an Oil and Lemon Dressing to it. And then I added some Avocado and Paprika, Cumin, Celtic Salt, and Dried Onions to the Dressing mix.

Olive Oil

Lemon Juice

Paprika

Dried Onions

Cumin

Celtic Salt

I ate a much smaller amount of  THIS food… which was really good. But I was ultimately thinking about lunch and how much I had eaten.

Then to make matters worse, I didn’t work out last night. Because I had soo much food, I felt really tired and couldn’t bring myself to it.

I just finished eating the remains of a Carvel Ice Cream Cake… and my body is going into sugar shock. My head is light headed and I’m feeling very slow.

I really hate myself for doing that…. my body feels it too. It feels like there’s something in it that’s bad and it’s trying to process the bad stuff.

Before I had the Ice Cream Cake I had some Noodles and an Eggplant, Onion, Garlic, Bell Pepper and Steak Stew. Mike made this dish and I supported him by picking the Meat out of the stew before eating it. It was great!!

Vegetable Salad

Today's Vegetable Salad

Out running around this morning…Mike and I happened upon a great Mediterranean Restaurant in Downtown D.C. off L street and 20th. We walked in and the place wasn’t much to look at, but when you neared the back of the restaurant you saw all the food laid out. It looked great, the food was presented in buffet style with so many colors, salads, rices, and dips, it was great.

I actually put together a green salad with some Red Bell Peppers, Olives, Red Onions, and an Oil based dressing. Then I picked up a Rice dish, Eggplant dish, and a Mushroom, Green Bean Salad. Yah know, Mike told me before we went in, I think you’re going to like this place. It has all the foods you eat.! Well he was right. 🙂

Then tonight, it was great… Mike and I unloaded the car of drying cleaning and some shopping items. And immediately took to the kitchen to make our respective meals for dinner. He made his Gormazabzi (Meat, Bean, Onion Dish) with Rice and I made this great looking Vegetable Salad. I chopped up Asparagus, Broccoli, Red and Orange Bell Peppers, Sweet Peas, Carrots. I put together an Olive Oil and Vinegar dressing with seasonings like Cayenne Pepper, Paprika, Celery Salt, Thyme.

Broccoli

Dressing:
Olive Oil
White Wine Vinegar
Pinch of:
Cayenne Pepper
Paprika
Celery Salt

So far so good, we got in around 8:30pm Pacific Time Monday night and ate Salad, Rice, and Okra with Eggplants. I really wasn’t hungry, but I didn’t want to offend Mike’s mother who made the lovely meal for us earlier. It was delicious as always and very similar to my Raw Eating Plan.

Thankfully, Persian food is fruit & vegetable based. Most of the meals made in the culture are stew type meals made with or without some meats. Regardless of what you eat, there’s always white rice on the side.

But here, I will have to really work hard to stay strong and on track, because already, I’m getting the business about not eating meat. I explained to Mike’s mother that I’m eating only Raw Foods, Vegetables and no meat or meat products. She proclaims, you have to eat meat. If you don’t eat meat you get sick…. some of the same thinking and opinion I endured with my girlfriend Kristie. And then, it seemed everyone was against me, because Mike ganged up on me then. But so far, he seems to be sticking up for me and preaching my praises..
