I’ve been feeling so much better these last couple of days… I must have over done it with the day at the Space Museum Saturday… and the stretching and weights these last couple of nights. My back is killing me again.!!!!

While we were at the Space Museum Saturday, we stopped for lunch at the indoor McDonald’s and I had a Southwestern Salad w/out the Chicken. Then we went to see the IMAX Theatre presentation of Space Exploration, which was great. Afterwards, we went home and hung out.

Mike made a Persian meal with Plums and Turkey Meat. It’s more of a stew and I ate that with some White Rice. For desert… I ate some Raspberries, Blackberries, Flaxseed, Whipped Topping and Leftover Ice-Cream.

I’ve been keeping up on my Carrot Juice and found a new drink Smoothie from Bolt house Farms Strawberries and Bananas. Tried some last night!

This morning… Sunday I woke up with throbbing back pain. After I took my morning vitamins and drank the Barley Juice. Mike made me another Veggie Soup: so I had some with Whole Wheat Bread crumbs.
Carrots
Celery
Cream Corn
White Beans
Barley

This soup stock however, was made with left over Turkey from last night’s meal.

As the day progresses, with me on the bed sitting on the heating pad, I’ve got my Carrot Juice, Almonds, Apple and Banana to munch on.:)

I’m in some serious pain today from going to my Pilates classed two days in a row, Wednesday and Thursday after months of not doing it.

So…. I just have to work it off today.. because tomorrow’s another day!!!!
It’s supposed to be another cold day here in Maryland… D.C. area and today Mike’s already got a head start on another Hearty Soup to eat!!!!

I think I might stick with my Minestrone Soup, because his soup has Chicken in it!

Dinner was great…. I’ve been veering away from the cookbook in an effort to try to make my own creations and staples. So far, it’s working out good.

Mike bought a rotisserie chicken from Costco tonight…. which takes care of him and his son. And for me, I made a Cucumber Salad with Tomatoes, Red Onions and an Oil & Vinegar Dressing. Then I also blanched some Green Beans and tossed with Olive Oil, Celery Salt and Chopped Almonds. To finish it off, I backed some Potatoes in the Microwave. I know I should have used the oven…. but I thought about the Potatoes too late.

Cucumber Salad:
8 Small Cucumbers
2 Tomatoes
1/4 Red Onion
3Tbls Olive Oil
2Tbls White Wine Vinegar
Pinch of Cayenne Pepper
Paprika
Salt
Celery Salt
Garlic Salt

Chopped Cucumbers, Tomatoes, Red Onions and toss with Olive Oil and Vinegar Dressing and Seasonings.

Green Beans:
1/2Lbs Green Beans
Pinch of Celery Salt
2Tbls Olive Oil
1/2Cup Chopped Almonds

Wash and cut ends of Green Beans off and throw into pot of boiling water for 3 minutes or just long enough to blanche Green Beans. Drain and toss with Olive Oil and seasoning and top with chopped Almonds.

The meal was quick and easy… and enough to evoke conversation by Mike’s son again. He was very curious by my decision to not eat meat. I told him it’s my decision and it feels good for me… and during the meal I noticed he didn’t even touch the chicken. I don’t know if this is a trend or just he trying something new out.! 🙂

Left LA with a snuffed up nose, headache and overall not feeling well.! Luckily, Mike drove out and we had pretty good weather,until Arizona. Before we even got out of California, we hit McDonald’s and I had a Southwestern Salad with out the Chicken and the Creamy Dressing. It was so windy and cold… a sign of temperatures and conditions to come.

As we continued West on I-40 in Arizona the temperatures got down into the single digits. Just outside of Kingman, Arizona we hit traffic. For at least 3 hours we sat in stop and go traffic. As if the dipping temperatures weren’t enough, the whole time we sat and inched my urge to go the bathroom built. Until we got to the Seligman exit where we stopped to gas up, use the bathroom, and figure out our course of action.

We decided to go back to Kingman, because as far as the eye could see, there were red lights lined up on eastbound interstate 40. Waiting in that was not going to be how we wanted to spend the night. So we got into Kingman and found the Walmart, where I got another Green Salad to munch on and we were off to the hotel room… until tomorrow!

We didn’t eat much Saturaday, I did however drink a bit more than usual! So we were, needless to say, hungry.

At 10:30 Sunday Morning, we had some of Mike’s moms Vegetable Stew(Asha Reshde) in Persian. That stuff, no matter how many days later, is still unbelievably fantastic.!!! So that carried us through our performance of the Nutcracker. I’ve never seen a production of the Nutcracker, so it was great to see one of Mike’s nieces in a production of the famous holiday production.

For dinner, we all met up at the California Pizza Kitchen. I ordered, for the first time a Vegetable Pizza without the Cheese!!! And they had no problem making it for me. Plus, I had a Chinese Chicken Salad without the Chicken.

I have been slacking on the Juice though!!!! Can’t seem to remember drinking the Carrot Juice I bought at Costco… Will have to work on that!!!
