I started the day off with making my Mid Morning 8oz Juice of Carrot, Celery and Greens before I headed out to church.

I used Celery for Beets, because I had ran out and just used Green Leaf Lettuce for the Greens. I drank the Juice on my way to church and on my way home… and it was really good.

While I was out.. I made it a point to put together my grocery list and hit the Whole Foods and Giants for groceries. At Whole Foods, I picked up the Raw Apple Sauce I ate for lunch.

Mid Afternoon: it’s an 8oz Carrot Juice with Barley Max Powder. But unfortunately, my order has not come in yet… so it’s just Carrot Juice and maybe some Celery and Cucumber.

Dinner menu looks like this: Garden Salad and¬† Minestrone Soup. Looking forward to making dinner. ūüôā

Garden Salad:

Ingredients:

2Cups Romaine Lettuce

1/2Cup thinly Sliced Radishes

1 or 2 Green Leaves

1Cup Spinach Leaves

8 or 10 Cherry Tomatoes

1/2Cucumber

Directions: Wash and dry veggies and tear lettuce and spinach into bite-size pieces. Slice radishes, slice onions, add cucumber and tomatoes. Top with desired dressing.

Minestrone Soup:

Ingredients:

8Cups Vegetable Soup Stock

11/2Cup Garbonzo Beans

2Cups Red Kidney Beans

1/2Cup Carrots

3Medium Tomatoes

1/2Cup Fresh Parsley

Celtic Salt

1Cup Cabbage

1/2Cup Onion

1/2Cup Celery

1Clove Garlic

1/4Tsp Thyme

3/4Tsp Basil

1/4Tsp Oregano 

1/2Box of Spinach Noodles

Directions:  Peel and Dice Tomatoes. Cook and Drain Kidney and Garbanzo Beans(I used canned) . Mince Garlic and Parsely. Chop carrtos, onion, celery, cabbage and garlic and saute in water or soup stock over medium heat until the onion is translucent Рabout 5 minutes. Stir in kidney beans, garbanzo beans, diced tomatoes and minced herbs. Bring to a simmerm then turn heat down and simmer about 10 minutes. Stir in Parlsey and simmer with lid partially on for about 15 minutes or until cabbage is tender. As the soup cooks, it will thicken. Add more tomatoes or soup stock as needed. Serve over spinach noodles.

As the title implies… the morning started off a little rainy. I did wake up early, but Mike had to leave for business early so I wasn’t able to get to Pilates Class this morning. Hopefully this afternoon I can squeeze it in.:)

But, I did get up and made this mornings Juice Drink of Carrot, Beet and Cucumber. I also took my spoonful of Barley Max with water and took at look at the menu for today. 

HINT: Cucumber juice is a natural diuretic, is beneficial for those with rheumatic ailments, is high in potassium, promotes hair and fingernail growth and helps to eliminate skin eruptions.

Lunch:¬† Bananas until I’m satisfied

Carrot Soup:

Ingredients:

2Cups Carrots

1/4Cup Red Pepper

1/2Cup Celery

1/4Tsp paprika

1/4Cup Red Onion

1/4Cup Broccoli Florets

1Cup Fresh Carrot Juice

1/2Tsp Thyme

Celtic Salt

Directions: Clean and grate carrots, and finely chop onion, red pepper, broccoli and celery. Mix together. Add carrot juice, Celtic Salt and seasonings. Stir to blend.

Ingredients:

2Large Apples

2Cups Green Cabbage

1/2Cup Organic Raisins

1Cup Carrots

2Stalks Celery

Directions: Grate apples, carrots, cabbage, chop celery and add raisins. Delicious plain of with the following dressing.

Combine and Mix well:

1/2Tsp Dried Onion

2Tbsp raw unfiltered honey

1/2Tsp minced garlic

2-3Tbsp Organic Apple Juice

HINT: Organic raisins have no harmful sprays that regular raisins do. Regular raisins are sprayed with harmful chemicals then left in the sun to dry, causing toxic chemicals to be concentrated in the raisins.

This morning I got up and looked outside the window and saw the rain… thought there go my walking plans. All day today, the forescast says¬†it’s supposed to rain.¬† So I will have to figure out something else for a workout.!!!

But until then, I made my Juice in my VitaMix Juicer.:

Carrot Juice:

Ingredients:

 4 Carrots

 4 Celery

2 Handfulls of Spinach

1 Apple 

Directions:

Cleaned and Chopped up Vegetables, add water and ice. Turn on VitaMix on Variable 1 and turn up speed to 10 and mix for 1minute or until desired consistancy.

Then I went ahead and pulled the Barley Max container out of the cupboard and mixed a glass of water with 1 spoonful of the powder.

Last night I made a Colorful Marinated Salad and a Butternut Squash that was great. I didn’t boil the Butternut Squash enough, so I think it was a little harder than expected.¬†

Colorful Marinated Salad:

Ingredients:

1 Orange Bell Pepper

1 Small Red Onion

1 Avocado

1 Small Bunch Broccoli

2 Carrots

1/2 Lemon Juice

Directions:

Chop up all the vegetables and mix with Vinegar & Oil Dressing. Cut one lemon in half and squeeze into vegetable mix.

Ingredients:

1 Butternut Squash

1Cup Bread Crumbs

Directions:

Peel and de-seed squash. Chop into smaller pieces and boil in water until tender. Mash the butternut squash and layer into pan with bread crumbs, making sure to top with the bread crumbs. Put in the oven at 350 degrees and bake for 15 minutes.

I ran over to the Farmers Market this morning to get all the veggies and I need to keep me through the week. I also got a bunch of Beets to add to my Juicing.

Since Thursday, I’ve been walking in the mornings which is great, but I feel hungry more throughout the day. And today after my lunch of left over Colorful Marinated Salad and TWO pieces of Cheese and Onion Pizza (ugh!!!) I ate a Special K Protein Bar Double Chocolate. It says the calories from it are only 180, but all the non-natural things in the bar are what worry me.:(

Coating(sugar, partially hydrogenated palm kernel oil, cocoa precessed with alkali, whey, nonfat milk, soy lecithin, sorbitan monostearate, salt, polysorbate 60, artificial flavors), soy protein¬†isolate….etc. These are just the first couple of ingredients. The bar sounds boxed and chemically processed, not natural at all!. Not to mention made with animal products.

I was going to have a Yogurt; because it turns out I’m not eating enough beans to get my protein and alkaline balance.¬†Unfortunately, Mike threw out the containers¬†because¬†he thought they were expired. I asked him, next time look at the expiration date before you throw it away.

So I drank my second Carrot Juice…., which I love, because it tastes like I’m drinking something with sugar. It kinda kills the mid afternoon sugar urge.¬†For¬†dinner, I ate the remaining Colorful Marinated Salad and I’ve been snacking on the Roasted Pepper Triscuts.¬†But I think I’m¬†done with them, so I’m just drinking water. I hope I’m able to keep out¬†of the Chocolate, because last night I ate two pieces of Dark¬†Chocolate.¬†

Tonight we’re watching the “Hope For Haiti Now” fundraiser…. it’s really spectacular. But still waiting to get through to make my donation.!!!¬†

After a replay of Saturday Mornings breakfast… we visited a bit longer.¬† We talked about how each of us is doing after having the Ear Candling done.

She said, she felt good and didn’t have her sinuses bothering her and claims she slept better. I admitted I slept pretty deep as well and am not blowing my nose every 5 minutes to wipe¬†my runny nose!!!

I also talked¬†with Liz about how¬†she’s doing on her¬†Raw Eating Plan and she told¬†me, she’s not doing as well as she sees me doing on it. She admits, she’s not as strict with it as I am, because she’s cheating a lot on sweets and cheeses and meets. But I told her I cheat too! And it’s a struggle to get all 3 servings of the Barley Max and drinking the Carrot Juice. I really do miss my Juicing.!!!

Before you knew it, it was time for everyone to hit the road again. My girlfriend had to be back at work Monday morning, and she too enjoys watching Sunday night on ABC!!!!

After they left, Mike and I went to go pick his son up from the mall, where he was dropped off. From there we decided to take a drive. We got back to the house around 3pm again. This time, Mike and his son ordered some Persian Kabob’s on the way back for food. I stayed strong and waited to get home to make my Better Than Tune Recipe… I hadn’t had it in a while and it was worth it.

 

 Better Than Tuna:

Ingredients:

2Cups Carrots

1Medium Ripe Bell Pepper

2Stalks Celery

1/2Medium Red Onion

1/2Cup Parsley

1/2Tsp. Kelp

1/2Tsp. Sea Salt/Celtic Sea Salt

4Tbls. Rhonda’s No-Oil Dressing

Directions:

Finely Chop the pepper, celery, onion and place in a bowl. Finely grate carrots, resembling carrot pulp and add the carrot to the vegetable mix. Combine 4Tbls. of Rhonda’s Dressing, Salt, Parsley and Kelp and add to the above chopped vegetables. Mix well and allow to marinate for flavors to blend. May be served on a bed of lettuce, on a sandwich, or to stuff a pita.

My Version of Rhonda’s No-Oil Dressing:

Ingredients:

1Cup Raw Almonds

1Cup Distilled Water

Soak almonds in water 24 hours or overnight, drain, and discard water. Place almonds in blender with the 1Cup of Distilled water and blend about 2 minutes until creamy. Stop the blender and add the following ingredients:

2Tsp. Nutritional Yeast Flakes

1Tsp. Kelp

2Tbsp. Lemon Juice

1/4Tsp. Sea Salt/Celtic Sea Salt

1Tbsp. Minced Parsley

2Tsp. Garlic Powder

2Tbsp. Dried Onion Flakes

1Tsp. Dill Weed

Pinch of Cayenne Pepper

1Tbsp. Raw Unfiltered Honey or 1 1/2Tbps. Chopped Dates

Blend to Mix… pour onto the vegetables and ready to serve.

To the best of my ability, I’ve been taking my Barley Max 2 times a day. I’m supposed to take the Barley Max 3 times a day, the morning, 30 minutes before lunch and again dinner. But it never fails,¬† I’m out of the house for one of those meals or I just forget. For example, all day Tuesday I did not take my Barley Max or drink Carrot Juice.

On the Carrot Juice front, I’m drinking at least 1 to 2 glasses regularly. I’m not going to say a day, because it’s so speratic. Because¬†of this irregularity with the Barley Max and Carrot Juice I don’t feel like my¬†body is processing food as¬†quickly or filling me up as much. Because believe it or not, I got filled up drinking the juice.

For lunch, Mike wanted to get a¬†Pizza at Tally Ho Restaurant. So I went to the¬†post office to mail his express mail and picked up the Cheese & Onion Pizza.¬†¬†I asked him to order a part of the Pizza with no Cheese on it… and they made it like that!!!!

So I mixed up my Garden Green Salad and Oil & Vinegar Dressing to go along with the Pizza. I also added the Grilled Peppers, Onions & Zucchini to the Pizza too. It was quite good.

For dinner, I made Mike’s son Roasted¬†Potatoes and Onions with¬†some Paprika, Parsley and¬†other Seasonings. I have to say, it was really good for no other dinner¬†preparations.¬†I thought I’d pour some Olive Oil into a¬†Saut√© Pan and¬†threw in the cut up¬†Potatoes with their skin still on. I did the Potatoes first, because it takes them longer to cook. Then I¬†added the Onions. But the Potatoes were falling apart and kind of burning to the bottom of the pan. So I turned down the heat and added some more Olive Oil and then I¬†added the¬†Seasonings and let the Onions cook.¬†

Potatoes & Onions:

Ingredients:

6 Medium Potatoes

1 Medium Yellow Onion

3Tbls. Olive Oil

1/4 Cup Parsley

1/4 Cup Paprika

1 Tsp. Cayenne Pepper

Sea Salt

Directions:

Wash and cut Potatoes into 1/4-inch cubes then slice Onions into thin slices. Heat Olive Oil in Sauté Pan and add Potatoes, sliced Onions, then seasonings. Let ingredients soften and meld together. 

While I was making the Potatoes and Onions, I decided to have the left over Fresh Vegetable Salad I made the night before. I also had some Whole Grain Rigatoni from the day before. BUT much to my surprise, the¬†Fresh Vegetable Salad didn’t keep very well. The¬†Vinegar in¬†it became too¬†overpowering, making it too sour and tart to eat. So I¬†had some¬†of the Potatoes & Onions.

For dessert, I¬†drank¬†some Carrot Juice with a couple more pieces of Danish! I can’t believe it… just because this food is in the house I feel I need to eat it.¬†This is not¬†right!!!!!¬†¬†¬†
