Instead of my Pilates Class… I got up early and went to the National Cathedral for mass.

Every Sunday is a good day when I go to mass… so therefore, my eating plan was spot on!

Breakfast 1Tsp Barley Max Powder mix with 4-8oz glass of Distilled Water

Lunch: Carrot, Celery, and Cucumber Sticks

I prepared my lunch to go. Because we decided to go to a festival and spend some time out in the beautiful weather Sunday. So I bagged the Sticks and pre-made the Mid Afternoon Juice and had my barley max on the go to. We came home for dinner. Where I managed to make my meal. I did however, munch on unleavened bread. More than I should have, but it tasted so good!!

Asparagus Salad:

Ingredients:

2lbs Asparagus

3Medium Tomatoes

1Stalk Bok Choy

1Bunch Spinach Lettuce

2Stalks Celery

1Red Bell Pepper

Directions: Wash and dry vegetables, place lettuce in bowl, add asparagus, which should be cut into bite-size pieces. Add chopped tomatoes, diced bok choy stalk, celery and red peppers. Toss to combine. A raw dressing can be made by removing 1/3 of salad and placing in blender, and blend until creamy. Sprinkle with grated almonds.

Better Than Tuna:

Ingredients:

2Cups Carrots

1Medium Ripe Bell Pepper

1Tomato

2Stalks Celery

1/2Medium Red Onion

1/2Cup Parsley

1/2Tsp Kelp

1/2tsp Celtic Salt

4Tbsp Rhonda’s No-Oil Dressing

Directions: Finely chop the pepper, celery, onion and tomato, and place in a bowl. Finely grate carrots, resembling carrot pulp, and add the carrot to the vegetable mixture. Combine 4Tbsp of Rhonda’s Dressing, Celtic salt, parsley and kelp and add to the above chopped vegetables. Mix well and allow to marinate for flavors to blend. May be served on a bed of lettuce, on a sandwich or to stuff a pita or tomato.

Rhonda’s No-Oil Dressing:

1Cup Raw Almonds

1Cup Distilled Water

Pour water on almonds and let soak overnight. Place almonds in vita mix or blender with 1 cup distilled water and blend about 2 minutes until creamy and add:

2Tsp Nutritional Yeast Flakes

1Tsp Kelp

2Tsp Lemon Juice

1/4Tsp Celtic Salt

1Tsp Herb Seasoning

1Tbsp Minced Parsley

2Tsp Garlic Powder

2Tbsp Dried Onion Flakes

1Tsp Dill Weed

Pinch of Cayenne Pepper

1Tbsp Raw Unfiltered Honey

OR 1 1/2Tbsp Chopped Dates

Directions: Blend to mix and pour over vegetables and serve.

Since my girlfriend left on Sunday afternoon, it’s been a leftover eating frenzy. I was eating the Better Than Tuna with a slice of Whole Wheat bread and a side of the Almond Cheese for my meals.

PLUS…. as a gift my girlfriend brought some chocolates with her. And guess who’s been eating them!!!

Tuesday we hit the road at 7:30am and got to FLA. At 7:30pm. I think I did really well at the beginning. I poured the remaining Carrot Juice into a travel tumbler and drank that and didn’t even want a Starbuck’s. YEAH! I also packed a zip lock bag full of Almonds and a couple of flat bread pieces made with White Flour.  

Then for lunch we stopped at an Arby’s in South Carolina. We just crossed the state line and we were hungry, so I got a Turkey Sandwich with no Cheese and ate some Curly Fries. To go along with the Turkey eating, I had Mike stop at McDonald’s about 80 miles later to get an Oreo McFlurry. As soon as I ate it, I knew there would be serious backlash.!!!! When we finally got home, unloaded, unpacked and relaxed, I made myself a plate of Better Than Tuna, Almond Cheese and a couple of pieces of Whole Wheat Bread. Just enough to fill me up and not too much to lie in my stomach.Wednesday, I Juiced some Carrots and Apples because that’s all we had, and rushed out of the house for an appointment and then to meet a girlfriend for lunch. She took me to a small little sandwich shop in Daytona Beach. A place we’ve eaten before, so I knew there would be a lot of meat sandwiches available. I didn’t really trust the Salad making skills of the place, so I ordered a Turkey Sandwich with no Cheese, Mayonnaise on Wheat Bread. I did get an order of Sweet Potato Fries and an Orange Soda Pop!

Dinner was at the Outback Steakhouse, where I seriously indulged with a Margarita and since it was happy hour, I got one & the Second One was Free. We ordered for an appetizer Shrimp on the Barbie of which I had 2 pieces and a couple pinches of the Dark Rye Bread.  And here’s the worst part… once we got home from the restaurant I started eating the Cherry Filled Chocolates my girlfriend gifted us in Washington.

Knowing I ate more Chocolates than I should have, Thursday morning I woke up early and took to the streets for a brisk 45 minute walk around the neighborhood. After I got back, Mike poked his head into the Chocolate box and shouted who ate all the Chocolates? Apparently it was obvious I had a few. And he said the box is almost empty?? I fessed up and said I ate more than I should have last night!

I was able to properly Juice Carrots, Celery I bought from the store yesterday and some Apples. I finished the first 8oz Juice this mid morning and am rushing up to drink my second one now.

Green Salad

But before that we stopped at Golden Coral for lunch. It’s a place I hate to go to, but Mike likes it! So I said what the heck. I ate a great Green Salad with Kidney Beans, Chick Peas, Red Onions, and an Oil & Vinegar Dressing. I also added a Baked Potato, some Boiled Carrots and Salsa to put on my Baked Potato.

After a replay of Saturday Mornings breakfast… we visited a bit longer.  We talked about how each of us is doing after having the Ear Candling done.

She said, she felt good and didn’t have her sinuses bothering her and claims she slept better. I admitted I slept pretty deep as well and am not blowing my nose every 5 minutes to wipe my runny nose!!!

I also talked with Liz about how she’s doing on her Raw Eating Plan and she told me, she’s not doing as well as she sees me doing on it. She admits, she’s not as strict with it as I am, because she’s cheating a lot on sweets and cheeses and meets. But I told her I cheat too! And it’s a struggle to get all 3 servings of the Barley Max and drinking the Carrot Juice. I really do miss my Juicing.!!!

Before you knew it, it was time for everyone to hit the road again. My girlfriend had to be back at work Monday morning, and she too enjoys watching Sunday night on ABC!!!!

After they left, Mike and I went to go pick his son up from the mall, where he was dropped off. From there we decided to take a drive. We got back to the house around 3pm again. This time, Mike and his son ordered some Persian Kabob’s on the way back for food. I stayed strong and waited to get home to make my Better Than Tune Recipe… I hadn’t had it in a while and it was worth it.

 

 Better Than Tuna:

Ingredients:

2Cups Carrots

1/2Medium Red Onion

1/2Cup Parsley

1/2Tsp. Kelp

1/2Tsp. Sea Salt/Celtic Sea Salt

4Tbls. Rhonda’s No-Oil Dressing

Directions:

Finely Chop the pepper, celery, onion and place in a bowl. Finely grate carrots, resembling carrot pulp and add the carrot to the vegetable mix. Combine 4Tbls. of Rhonda’s Dressing, Salt, Parsley and Kelp and add to the above chopped vegetables. Mix well and allow to marinate for flavors to blend. My Version of Rhonda’s No-Oil Dressing:

Ingredients:

1Cup Raw Almonds

1Cup Distilled Water

Soak almonds in water 24 hours or overnight, drain, and discard water. Place almonds in blender with the 1Cup of Distilled water and blend about 2 minutes until creamy. Stop the blender and add the following ingredients:

2Tsp. Nutritional Yeast Flakes

1Tsp. Kelp

2Tbsp. Lemon Juice

1/4Tsp. Sea Salt/Celtic Sea Salt

1Tbsp. Minced Parsley

2Tsp. Garlic Powder

2Tbsp. Dried Onion Flakes

1Tsp. Dill Weed

Pinch of Cayenne Pepper

1Tbsp. Raw Unfiltered Honey or 1 1/2Tbps. Chopped Dates

Blend to Mix… pour onto the vegetables and ready to serve.

I went to my Pilates Class this morning at 8am and was a little disappointed in the class itself. I was expecting to get my cardio going and work my body… but what we did was deep stretching.

The class this morning started at 7am and ran until 9am. It started with a warm up and a run for 45 minutes and back to the studio.  I elected not to do the run and got to the class at 8am hoping for a workout.  Well, I should have gone on the run to get my cardio. I found out some of the other women walked for 45 minutes, which I could have done too!!!

Regardless, it was good to stretch out some of my achy zones anyway.

I really didn’t feel like doing anything spectacular for lunch… so I just had the left over Garden Salad I made earlier this week and some Pizza from Yesterday.

I had some last minute groceries to grab for some company coming into to town tonight. A girlfriend and her daughter are coming for a visit this weekend and I’m pre making some dishes. This particular friend of mine got me started on the Raw Foods Diet, so I’m prying open my cookbook to make some meals.

Mike chimed in as well, and made a Roasted Eggplant with Potatoes (a dish my girlfriend loves.) I went ahead and had that for dinner tonight!

Roasted Eggplant:

Ingredients:

2 Eggplants

6Small Yellow Potatoes

1/2Cup Olive Oil

Directions:

Peel and Slice Eggplants and Potatoes. Add Olive Oil into Grill Pan and individually add Eggplant and Potatoes to roast separately then combine into pan and serve with Whole Wheat Bread or Whole Wheat Noodles. Add Red Sauce to make Eggplant Parmesan. 

 

Last night, Mike wanted some Sweet Potato and Regular Potato Fries. So for dinner last night, I chopped up Sweet Potatoes, Potatoes, and Onions to put out on the Grill with Olive Oil. I had some of that along with my Garden Salad.

4 Sweet Potatoes

3 Potatoes

1 Onion

1/2Cup Olive Oil

2Tbls. Parsley

1Tbls. Cumin

1Tbls. Crushed Red Peppers

Sea Salt

Directions:

Peel and Chop up all the Potatoes and Onions. Add Olive Oil to Grill Pan along with Potatoes and Seasonings and Grill for 15 minutes.
