My brothers boys have got to be the best little monsters in the whole wide world… in part because they’re my little nephews. They are soo much fun at their ages 6 and 7!!! I think they’re like Steve and I when we were kids… so much energy and always on the go!!!

In the morning… Christie and I were texting and we decided to meet her and the boys at the Hotel Pool so the boys can have some fun. Of course they were jumping in, when the sign said NO JUMPING, but we weren’t about to say anything!! After we dried them off and dressed them back up… we went to their place for lunch.

I was on a veggie kick. I had a Carrot, Broccoli, Cucumber Salad and then followed it up with two pieces of Cheese Pizza…. On vacation this eating plan is put on the back burner. Especially when there’s pizza in the same room with me. Pizza and French Fries are my downfall….

Stopped in to Whole Foods and picked up a side dish of Rice Pilaf and went to my step brothers house for dinner. It turns out, his wife ordered Pizza from Pizza Hut too!! At least I had the Rice Pilaf:)

As we checked in yesturday… I eyed the Whole Foods Store across the Interstate and was jumping up and down inside. In Florida, I realized Whole Foods has a Juicing Station and I assumed all the Whole Foods Groceries have them. I was mistaken. This morning we drove over to the Whole Foods across from our hotel room and there wasn’t a Juicing Station.

Saddened by the news, we went over to Einstein Bros. Bagels and I had a Caramel Frappucino, and a Whole Grain Wheat Bagel with Honey Butter. ūüė¶

But then we decided to go down to King Soopers, another grocery chain in the state and found some 100% Carrot Juice and 100% Veggie Juice Mix drinks. So we bought them, looking to replace my daily juicing needs. To verify just how natural and organic these juices are… we called the 800 number on the bottle and found out that the only additives in these juices are salt, and only for the Veggie Mix Juice. The Carrot Juice has no additional additives. YEAH!!!!

So my juicing concerns are taken care, I’ve got my Barley Max… and now we’re going over to my brothers place to hang out and have lunch. Then it’s over to my step brothers place for dinner. Busy Busy Busy!!!

Got in Monday Afternoon…. to a sunshiney Colorado Holiday afternoon. Rushing over to visit my girl Kristie and hit Olive Gardens endless Soup and Salad. Then checked into the hotel and headed over to my brothers house for dinner.

He was making Burgers and Pasta Salad. While we were watching him prepare the meal, we were catching up. As he measured the Milk and Mayonnaise for the Pasta Salad, I had to tell him. Steve, I’m a vegetarian now and I don’t eat meat products or dairy. He had a look of OH! NO!…. And then quickly I said, don’t change what you’re doing.. I just wanted to let you know. Then I said, well do you have any Carrots or a Salad I can munch on. And he said, well of course…. it turned out to be better than I thought!!!

We hit the road again Saturday… on our way to Colorado for Thanksgiving. During the drive we ate lunch in the car…which was the Green Bean Delight and some Roasted Potatoes with Rosemary.

Our first stop in the journey, New Orleans, Louisiana. I‚Äôd never been there, nor Mike and we decided to explore the minute we got there. First, we got to our hotel room and freshened up a little. It was only 7:30pm when we got in town so we grabbed a bite to eat at Mr. B’s Bistro. It’s on the corner of Conti & Royal. Since we were in the bayou, I thought I’d have a cup of Seafood Gumbo and a Green Salad. We were really good Saturday night, and only had one cocktail each, I had the Bombay Sapphire & Tonic and then followed that bad with a Fruit Crisp with Sorbet for desert that Mike & I shared… then we hit Bourbon Street.

The next morning…. we walked around the French Quarter some more and went to Cafe Du Monde for some Coffee & Beignets. So sinful!!!!! After visiting the 9th Ward, we left for Dallas. But in Baton Rough we stopped off at the Macaroni Grill where I had their Mediterranean Olives and a Green Salad. We drove through dinner, so I had my left over Roasted Potatoes and Roasted Zucchini & Squash (food I made Friday night.)

We got into Dallas a bit late… so I just cozied into bed and relaxed. Monday, we started early and headed toward Dealey Plaza and drove up Main Street to check out the original Neiman Marcus Store!!! While we were driving around downtown Dallas I ate Mike’s Margarita Pizza leftovers. Three small pieces of pizza for breakfast…NOT GOOD!!! Then we stopped into McDonald’s and I tried the Hot Cafe Mocha.

Around 9:30AM we hit I-35 North to Oklahoma City, OK to visit the Memorial and eat lunch at Brick town. After Mike walked through and experienced the site of the April 19, 1995 bombing site, we picked Crabtown to eat lunch at. Mike wanted a Steakhouse (I couldn’t find one) so we compromised and I had a Green Salad with Fried Onions on top and a cup of Red Beans and Rice.Yum!!!!

We reached Wichita, Kansas by the time we got some sprinkles on the windshield. So I asked Mike to turn the station to the weather forecast… for an update as we drive west on 1-70. Forecasters were predicting more rain, high winds and snow closer to Goodland, Kansas. So, we decided to stop in Hayes, Kansas for the night. I didn’t complain because I knew I was going to finish my Macaroni Grill leftovers and watch Dancing With The Stars-Semi Finals. BONUS!!!

I hurried home this afternoon…. because I had my Raw Veggie Salad on the brain. I finally made it home around 1pm and drank my Barley Max mix. It just so happened, Mikes son was over for lunch, so I sat with them on the balcony after I served the Veggie Salad and ate my Salad. It was so worth it!!!

Then after lunch I tapped into the Flaxseed Cereal Mix….. it’s really sweet tasting so I think there’s some sugar in there that I can’t find on the box.

Later, Mike and I went shopping up in Saint Augustine… and we stopped in for dinner at Carrabba’s Restaurant. I had the Mediterranean Salad with Oil and Vinegar Dressing and the Rigatoni Martino without the Alfredo Sauce and Cheese. Plus, a glass¬†of wine. It was happy hour afterall. But this evening… I’m drinking water. I’m on my first glass and hope to drink at least 2-3 glasses of water¬†before bed. I’ve realized¬†I’m not¬†drinking nearly as much water as I should.. I’m drinking liquids, but not water by itself.!!!

Back Down to 172lbs

I stepped on the scale this morning and I was back down to 172lbs. Very excited to see those numbers together.

My cousins left for Canada this morning…. and while they were packing up I juiced and drank my¬†A.M. Barley Max and said goodbye to Chris and Diane.¬†I worked on the computer most of the morning and then headed out in the afternoon to run errands. But with all that running around, I missed lunch. Not a good thing !!!!

So for dinner, I decided to get out the cookbook “Recipes for Life” and make a well balanced dinner. I decided on chopping up some Bell Peppers, Carrots, Green Onions, Cucumbers, Broccoli for a Raw Veggie Salad and sprinkle it with Chick Peas and a Oil & Vinegar Dressing. Then¬† I remembered I had some Green Beans in the Refrigerator and saw the Green Bean Delight recipe, so I made it.

Raw Veggie Salad

1Red Bell Pepper


1Bunch of Broccoli


2Green Onions

Chop up all the veggies to desired size and add dressing. Chop shallots and mix oil and vinegar with seasonings.


6tbsp Oil & Vinegar

Pinch of Cumin

Pinch of Celtic Salt


Green Bean Delight

1Medium Onion

2Very Ripe Tomatoes

2Cups Soup Stalk

1/2lbs Green Beans

1/2Cupe Dried or Sun-Dried Tomatoes

1/4Cup Fresh Basil

Celtic Salt

Remove ends from beans, chop onion and tomatoes. Place beans and onion and 1 tomato, dried tomato, basil and soup stalk in blender. Blend until smooth, add celtic salt to taste. Finely chop second tomato, place in small amount in bottom of bowl and top with soup.

Still Entertaining

I’ve been juicing again… like before and my body is thanking me for it. I actually feel a difference between drinking the real juice and the powdered juice. All I can say it feels¬†GREAT!!!!

Did some more touring around.. some sightseeing. A big plus was the Shuttle¬†Launch down in Cocoa Beach Monday…. That was something spectacular. I’m really glad we left the house in the morning and just¬†drove¬†straight down there, because by the time we got there around 1:30pm the road to get to the island where the shuttle was launching was closed off to only ticket holders. And we didn’t know anything about having a ticket, so we went over to the Museum which was packed with people sitting on lawn chairs and standing around for the lift off.¬†So we paid out $17 dollars to get into the Museum and watched with delight when it¬†actually happened at 2:30pm.

We were all in so much¬†awe driving back up the coast to¬†Palm Coast… it was really a¬†treat to see it first hand. Especially for my cousins, who’ve never seen a¬†shuttle launch¬†first hand.¬†Mike and I have seen the evening launch which¬†happened last year and¬†some rocket launches, all from our beach access along the¬†Atlantic Ocean.

We ended up at Flagler Fish Company for dinner… a recommendation from friends in the neighborhood. And I must say it was a good one!!!

I did indulge on some homemade chips and a salmon creamy dip : -(  But I had a Seaweed Salad with Soy Sauce and a regular Green Salad for dinner. Plus again with the 2-3 glasses of wine.

Tuesday night¬†my cousins and myself went down to Disney’s¬†Animal Kingdom, just the¬†three of us and had a¬†Safari in Africa and spent¬†time in¬†Asia before watching the Jingle, Jungle Mickey Mouse Christmas Parade! Than we headed over to Epcot on¬†our Park Hopper Pass and indulged in the cuisine of Italy…. I had¬†2 Glasses of White Wine of course¬†and a Red and¬†Yellow Beet Salad and a bowl of Spaghetti Rusitici… Whole Wheat Pasta and Tomato Sauce. Gave¬†what I couldn’t eat to my cousin, who loved it!!!

If it wasn’t for all the walking we were doing on my cousins vacation to Florida and the Cruise…. I don’t think I would have¬†ONLY¬†GAINED 4LBS.!!! Because I didn’t touch one piece of workout equipment or do anything of the like while they were here… So now that they’ve¬†gone it’s back to normal… until we leave for Colorado.!

SO this was a big day, Saturday morning, no breakfast and finally some real fresh juice!!!

After I made my juice for the day, I went to the farmers market to load up for the week on Beets, Carrots, Celery, and some other little extras. From there, we went on a journey up north to Jacksonville, where we took my cousins to Cheesecake Factory. That’s were I said no to a glass of wine, and buckled down with my eating. I had Water, Hummus, Pita Bread, Avocado Rolls(not the best selection because they’re fried) and then a Beet Salad to round it out. Then we followed our journey further north to Amelia Island for cocktails at the Ritz Carlton. I had a Frangelica on Ice and Mike had a Heinekan after we got there. But my cousin Chris was not feeling so well.

I think he had some residual motion sickness… which is¬†continuing on into today(Sunday). I sent them over to the pool to relax a little and I will be joining them for some games of Mexican Train! It’s a great new game they learned while they were visiting my brother in Colorado.!!

But before I go… I must relay some good news… I weighed myself again this morning and I’m at 173lbs. !!!! To celebrate I had my mid morning juice and a Blueberry Muffin. I know… NOT GOOD!!!!

What A Great Cruise!!!

We came back Friday night.. and topped our excursion off with a meal at Ruby Tuesday’s. Which was just fine with me… becuase I had the salad bar.

Then the next morning, I weighed myself at 176lbs. I gained 4lbs on the cruise. And I know exactly what I did to deserve those 4 additional pounds.

First, I drank recklessly… just about every night, before, during and after¬†dinner. It was mostly white wine… and then on our Mexican excurision I threw in a frozen drink and than another¬†time on board I had the drink of the day!!! Second, I had dessert 2 times. Tuesday night I had Pineapple, Orange, and a Green Sherbert¬† Bowl after my Salad, Soup and Steamed Veggies. Then the following night I¬†had some Coffee Cream¬†Cheese¬†Cake and Tarrimisu(?). Third, I ate a breakfast of Cream of Wheat, Cantalope, and Honey¬†Dew,¬† it’s a¬†meal I usually don’t indulge in.¬†And towards the end of the cruise I began indulging in hashbrowns and¬†croissants with breakfast. But I must say, outside of the three bads I committed, eating Raw on a cruise isn’t as hard as you may think. I brought along with me my powdered Barley Max, Beet Powder and Carrot Powder(in place of my juicing) and¬†it wasn’t a stretch to mix my powders and eat balanced. For example, for lunch I had a choice from at least one food item¬†in the¬† buffet. There was a¬†Salad Bar every¬†day. And a¬†Grill, where I opted out of selecting a meat with my¬†veggie stir fry. Plus, something new on the cruises, is a¬†Deli station¬†where I got a veggie wrap. And as agonizing as I thought the dinners would be, I had quite a easy time selecting¬† my¬†evening meal!!!¬† I did get some stares from the wait staff. And the constant question, is that all you’re having???¬†After the second night, you’d think they’d stop asking after I gave them my order of Green Salad, Soup, and a Baked Potato or Steamed Veggies. The Soups everynight¬†were¬†a¬†selection of creamy and vegetable based.¬†And on the menu, the chef’s created a¬†Spa Selection, offering customers¬†a healthier and¬†¬†lighter¬†meal.¬†¬†

Closed Kitchen

That’s right, as my cousin Chris’ birthday gift to his wife Diane… I helped him orchestrate this surprise¬†Carribean Cruise for her¬†and we’re going with them!!! So until Friday the kitchen will be¬†closed, while we go on our Carribean Cruise to Cozumel, Mexico!!!!

I’m very excited¬†to be going¬†with my cousins, and taking on this¬†eating challenge. These cruise ships are known for their huge variety and endless supply of food… and I’ve made a promise to myself to behave and excersize while I’m on the cruise.¬† I will be taking notes of my food intake and as many pictures as I can.¬† I’d like to be able to blog as I go, but it’s too expensive to get on the ships wifi… so you will have to trust I will not fall into endless temptations while I’m cruising.

This honestly will be a bit of a challenge, because the several times we’ve gone on cruises, I’ve been able to eat what I wanted. But at the same time, I still watched and managed my intake. What I feel will be the trouble spots are the evening dinners and the liquor. I’ve already prooved to myself I can’t handle it from Saturday night’s actions. And you know we’re smuggling wine and beer on the cruise for us to enjoy… fingers crossed it won’t be like Saturday night’s 4am wine drinking festival.!!!! Until next week.
