Lunch With Robin

This afternoon, my partner in crime came over. We chilled and caught up on things since the last time we got together(last week). I told Robin about all my doctors appointments I had last week and this week. They were all annual visits with the doctors to see how I was doing with my health and weight loss. Last year, I checked in with the Doctors because I had chest pains, joint pains and overall I knew I was not healthy. It turned out I have asthma, and I was about 50lbs overweight.

Since then, as you know I’ve lost 10lbs from eating Raw Foods since September but technically,  my weightloss started in May. And since then,  I’ve lost about 25lbs overall. I told Robin how excited my doctors were and they were congratulating me on the weightloss and how well my testing was. I still have some blood work (for cholesteral) to be checked and compare it to last years numbers. I feel confident that the numbers will have moved from the dangerously high to normal range.

While we were chatting about that, we were making some food to munch on. And I have to admit, I didn’t go all out like I usually do with the preperations. Infact I reheated last nights meal and Robin put together a nice little Almond Butter Cream for some Cucumbers I chopped up. It was delicious!!!

Lunch was last nights Eggplant & Rice Casserole:

31/2Cups Eggplant

1 Bell Pepper

2 Gralic Cloves

3 to 4 Medium Tomatoes

1 Medium Onion

2Tbsp. Salsa – 1Cup Tomato, 1/2Cup Red Bell Pepper. 1/2Cup Corn, 1/2Celery, 2Tbsp. Onion, 1/2Cup Green Bell Pepper, 1/2Cup Cucumber, 1tsp. basil, oregano, cilantro, Celtic Salt, 1Clove Garlic, 2tbsp. Virgin Olive Oil, 2Tbsp. Honey. Chop and mince veggies, place half into blender until smooth and combine with remaining veggies and add seasoning.

1Tsp. Celtic Salt

1Tsp. All Purpose Seasoning(I left this out)

Chop up eggplant, dice onion, pepper and tomatoes, and mince garlic. Steam eggplant for 5 minutes. Add pepper and onion and minced garlic and steam an additional 2 minutes. Mix in tomatoes and salsa, simmer until juicy for about 5 minutes. Add seasonings and mix well. Serve over Basmati Rice.

Almond Butter Cream:

2Tbsp. Almond Butter

4Tbsp. Soy Sauce

1Tsp. Chopped Pepper

2Cucumbers chopped

Mix the Almond Butter and seasonings and spread onto Cucumber.

M.I.A.

Well it’ s been almost a week since I’ve logged in and blogged about my Raw To Lose 40 Eating Plan. In part I’ve had some computer problems, was stuck eating left overs, and also I’ve fallen off the wagon a little.

In addition to making an overload of food, I’ve been catching  myself eating some foods that are not in my diet plan. I’ve had cheese pizza (again) and then the other night I ate some whipped cream. No No’s in the Raw To Lose 40 Eating Plan.

The other night, Mikes daughter came over and ending up eating dinner at the house. So I made a great Green Salad with Bell Peppers, Green Onions, Tomotoes, Almonds, Cucumbers, Celery. In addition to that, Mike and I collaborated on a Whole Wheat Pizza. Mike made the Whole Wheat Dough and I added the canned Pizza Sauce, Cheese(on Half), Bell Peppers, Tomatoes, Sun Dried Tomatoes.

It was such a great tasting pizza, that I ended up eating the half I wasn’t supposed to. The Cheese Side!!! 😦

But I’m slowly getting back on track, working out and continuing to Juice my Veggies.
