Losing Another Pound

I stepped on the scale again and the numbers are going down…. by one pound. The number may be small, but it’s still the fact I’m losing.

To celebrate, for lunch I really went crazy. At Costco, I had some of Mikes Cheese Pizza and I ordered a Berry Smoothy. Cheese, White Bread, and I’m sure tons of sugar in the Smoothy really is what’s called going crazy with delight.! Right!>???

Hopefully the dinner menu makes up for the bad judgement at lunch.

I made Marinaded Green Beans & Red Bell Pepper and Bulgur. Both were brand new meals and they’re weren’t that bad.

The Green Beans:

1 lb of Green Beans

1 Garlic Clove

1/2 Tsp Dried Rosemary

1/4 Cup Fresh Basil

1Tbsp Extra Virgin Olive Oil

2 Tbsp Red Onion

2 Stalks of Celery

1Cup Tomato

Juice of 1/2 Lemon

Celtic Salt

Chop all the veggies and mix it together and let it marinate before serving.

Bell Pepper & Bulgur:

1/2Cup Bulger

3/4Cup Distilled Water

4Garlic  Cloves

1/2Cup Carrot

4Tbsp Walnuts or Pecans

1Cup Vegetable Soup Stock

4Medium Sweet Peppers

4Large Plum Tomatoes

4Green Onions with Tops

4Tbsp Organic Raisins

pinch of Cayenne Pepper

Bring distilled water to boil and pour over Bulgur. Let it sit for 30 minutes or until Bulgur soaks up the water. Remove Bell Pepper Stem and seeds by cutting it out from the top and place Peppers in boiling distilled water for 4 minutes and remove quickly. Preheat oven to 375degrees, chop all Veggies, Minch Garlic and Grate Carrots, and Chop Nuts. Mix all ingredients minus 1/3 of the Veggie Soup Stock and stuff Bell Peppers. Place in casserole that has a lid, pour remaining soup stock in the bottom of the casserole, cover and bake about 20minutes.
