Keepn’ it Light!

I know yesterday I didn’t log in… but I’m O.K. No major jumping off the wagon stories. It was a pretty normal day, heading out to the mall and running some errands. I did notice a trend though, all my meals went late starting with lunch. And today again that’s the case.

For lunch I did break out from the left overs(I ate them all) because I made a Marinaded Broccoli Salad:

1 Bunch of broccoli floret

1/4 Red Onion

1/2 Bell Pepper

1 Avocado

4tbs. of Extra Virgin Olive Oil

 1tsp. Celtic Salt

Sprinkle of Cumin

Sprinkle of Paprika

Mix it together, let it sit for about 20 minutes to let all the flavors mingle, and walah!

I did add a little too much salt, so I got some Whole Wheat Bread to eat the Salad with.

This evening, Mike has turned the tables on me and decided to make me dinner.

He made Roasted Eggplant and Peppers and a Cucumber Salad.

1 Eggplant

3 Tiny Bell Peppers

1/4 Cup Extra Virgin Olive Oil

2Tbls. Dried Onion

Sprinkle Paprika, Cumin, Celtic Salt, Garlic

4 Mini Cucumbers

1 Tomatoe

2 Green Onions 

2 Sprigs of Basil

Using a Balsamic, Garlic Spice Dressing Mike made earlier this week!!!! It’s delicious.
