On A Roll

It seems I’m on a roll of losing weight. Everyday, curiouse to see if there’s been a change in my weight I get on the scale, and I’ve lost another pound. It’s amazing to see the numbers falling by the wayside, but then I start to think, why is this really happening???

I’m not doing anything extraordinary to make the pounds dissappear! I haven’t stepped up my workout plan, infact I’ve cut back a little. The portions of foods I’m eating hasn’t changed. In fact, in these last couple of days, I’ve eaten questionable amounts of food.

Like yesterday, we stopped off at Wendy’s for a Garden Salad with Italian Vinegarette and a Plain Baked Potato before hitting Costco for our weekly grocery shopping trip. Then we went to the airport to pick Mikes son up, who’s in for the weekend visiting.

Straight from the airport we headed home and relaxed a little. Steven got hungry after a while and I made some Salmon Fillets with Butter, Basil, Lemon Juice. Honey BBQ Chicken(from the freezer section) and I chopped up Potatoes and Sweet Potatoes and Mike grilled them outside with Olive Oil and Seasonings. For a little appetizer, I chopped up some Pickling Cucumbers, Carrots, and Crackers and made the Almond Butter Dip. For my dinner I ate my Garden Salad from the night before and some Potatoes. I couldn’t stop nibbling on the Potatoes, Appetizer and then I realized there was a piece of Pizza left over from last night, and I ate that too. Oh and let me not forget the little sample slice of Chocolate Cupcake I ate at Costco, while we were there shopping yesterday afternoon.!!!!!

So, you can see, what’ s going into my mouth is not necessarily causing me to lose weight… But then I had another A-HA moment! I realized this week, that I’d stopped eating all the Whole Wheat Bread with my meals and snacking on it in between meals. Plus, I’ve cut out the Dates and I’m just grabbing handfulls of Almonds to snack on throughout the day.

If that’s what’s causing the weight loss…. than so be it. No more Whole Wheat Bread Snacks or Date Snacks.

Dropped Another Pound

It’s amazing, I stepped on the scale just for fun and I lost one more pound today. Putting me at a solid 172lbs!!! I’ve stopped working out at night and am watching closely what I’m eating. But this really shocked me, because Mike made pizza again last night(he’s got to stop making this!) and I again over indulged. That’s why I really got on the scale, to see how much damage I’d done.!!

At my friend Robins house, she made the best and most convenient lunch… After running around doing errands with her. One of the stops was Nature’s Food. A little health food store in her  Ormond Beach neighborhood for some Tomotoes, Basil, Watermelon and some other groceries. Little did I know, that was what we were going to have for lunch.

Literaly, we had a Raw Vegetable Medley:

1Yellow Bell Pepper

1Beef Steak Tomato

1 Carrot

1Small Head of Broccoli

6Fresh Basil Leaves

2Small Pickle Cucumbers

Oil & Vinegar for dipping the chopped up Veggies.

Then we had a bowl of chopped up Watermelon for dessert! It was the freshest, lightest, filling lunch. I really walked off to my next appointment satisfied until dinner.  Where I broke out the salad I made the day before, chopped up some Yellow & Red Tomatoes and had a conservative bowl of Green Salad with more than my share (1 piece) of Veggie Pizza. Again Mike made the Whole Wheat dough, the sauce was Ragu from a jar and he added some sugar to it, until I told him to stop.

Topping the Veggie Pizza:

1Red Bell Pepper

1/2Red Onion

2Tbps of Sun Dried Tomatoes(from a jar)

There are recipes in my Recipe Book for Pizza and Pizza Dough, but apparently, I’m always beaten to the finish. But I happy and proud to have lost one more pound. It makes me feel like I can accomplish my goal. 🙂

One More Pound Shed

That’s right, I’ve lost yet another pound. This one thought was a long and deliberated process, because for weeks I’ve been struggling to go down from 174lbs., but it just wasn’t happening. So yet again, I got on the scale this morning and came in at 173lbs. I feel great!!!!

What may have added to my weight loss, was the Corn Chowder (Raw) and maybe the fact that I didn’t work out last night????? I also cut back on the amount of times I ate Almonds and Dates too??? I’ve been eating about 3 Dates twice a day with a handfull of Almonds each time.  But since I’ve made a dent on the scale… I will be cutting back on those snacks and the portions I’m eating as well.!

Corn Chowder (raw)

Corn Chowder(Raw)

4Cups Fresh Corn Kernels

1Cup Zucchini

2 Medium Tomatoes

4Green Onions(I used 1/2Red Onion because I ran out of Green Onions)

1/2Bell Pepper

1Stalk Celery

1Cup fresh Carrot Juice

1/4tsp Thyme

1/2tbsp Celtic Salt

1/2tsp Basil

Cut the corn off the cob and chop up the rest of the veggies. Place 1/3 of the the ingredients in a blender, blend until creamy, and add to the chowder.

I also chopped up a Green Salad again: Just for Dinner… or tomorrow.!

Green Salad

1/2 Box of Baby Green Salad

1/2 Cucumber

1Cup Palmagranites

1/2Celery Stalk

1/4Cup Red Onion

1/2Bell Pepper

1/2Cup Sliced Almonds

1/2Red & Yellow Tomatoes

Well, I’m off to spend the day with my girlfriend Robin…. until later.

Raw Food Reruns

I made all this great food on Sunday… and have been picking at it until today. So I haven’t been creating anything new in the kitchen. I have been nibbling on Almonds and Dates for in between snacking(that stuff is great!)

Every once in a while, Mike likes to show off, and show me how and what HE can make that’s raw/natural to eat.  Sunday and Monday were those days!  He was so proud of himself the whole time he was putting the beans in the crock pot Sunday and one of those batches was going to be ready to eat later that day.  He assured me countless times throughout the day that I could eat it, no problem. There was no sugar, pepper or anything else I couldn’t eat in it. The first dish, Kidney Beans, Wheat Noddles, and Turnips.  While I was eating the bowl of beans and noodles, I thought what were these other soft, slimmy, hard shelled objects in the mix. I thought he threw some apples or something into the crockpot because they had a sweetness about them. But then I asked him what that was, and he told me it was the Turnips.

Then he made a batch of 15 Bean Surprise with  Turkey. Can you see the theme for this weekend. Where’s the Beano!!!! Of course I didn’t have any of that, I’m glad because the What’s for Dinner Loaf with all it’s seeds in it was bloating me just fine.

In between all these beans and the left-overs, I had been nibbling on a Green Garden Salad I made Tuesday. I just cracked a box of Green Salad and chopped up some Veggies:

1/2Yellew Tomato

1/2Red Tomato

3Stalks of Green Onions

1/2Cup Palmagranites

1/2cup Sliced Almonds

Top with Splash of Vinegar & Olive Oil for the dressing.

Lunch today was the last helping of my salad, so I’ll have to make something for dinner. I need to get rid of my Yellow Squash & Zucchinis???

Tomorrow I will be hanging out with Robin again and won’t be back home until dinner.!! Can’t wait to see what we’ll do for the day together.???

Fresh Fruit Facts II

What is the correct way of eating fruits?

FRUITS SHOULD BE EATEN ON AN EMPTY STOMACH.! – THAT MEANS  NOT EATING FRUITS AFTER YOUR MEALS! According to Doctor Shelton, If you eat fruit on an empty stomach, it will play a major role to detoxify your system, supplying you with a great deal of energy for weight loss and other life activities.

FRUIT IS THE MOST IMPORTANT FOOD – Let’s say you eat two slices of bread and then a slice of fruit.. The slice of fruit is ready to go straight through the stomach into the intestines, but it is prevented from doing so. In the meantime the whole meal rots and ferments and turns to acid.. The minute the fruit comes into contact with the food in the stomach and digestive juices, the entire mass of food begins to spoil. Then the fruit mixes with the putrefying other food and produces gas and hence you will bloat!

Fresh Fruit Facts

It’s true, EATING FRUITS ON AN EMPTY STOMACH IS BENEFICIAL TO YOUR LOOKS. According to Dr. Herbert Shelton, when you eat fruit on an empty stomach, you will not incure as much grey hair, balding, nervous outbursts, and dark circles under the eyes – all these will not happen if you take fruits on an empty stomach.

And there is no such thing as some fruits, like orange and lemon are acidic, because all fruits become alkaline in our body, according to Dr. Herbert Shelton who did research on this matter. If you have mastered the correct way of eating fruits, you have the Secret of beauty, longevity, health, energy, happiness and normal weight.

When you need to drink fruit juice – drink only fresh fruit juice, NOT from the cans.. Don’t even drink juice that has been heated up. Don’t eat cooked fruits because you don’t get the nutrients at all. You only get the taste. Cooking destroys all the vitamins.

But eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it.

You can go on a 3-day fruit fast to cleanse your body. Just eat fruits and drink fruit juice throughout the 3 days and you will be surprised when your friends tell you how radiant you look!

Here’s a little F.Y.I. For those who like to drink cold water, this article is applicable to you. It is nice to have a cup of cold drink after a meal. However, the cold water will solidify the oily stuff that you have just consumed. It will slow down the digestion.. Once this ‘sludge’ reacts with the acid, it will break down and be absorbed by the intestine faster than the solid food. It will line the intestine. Very soon, this will turn into fats and lead to cancer. It is best to drink hot soup or warm water after a meal.

Repotting Plants

What's for Dinner Loaf

Better Than Tuna

I spent the morning re-potting some plants in the front yard. We’ve got some great tropical type plants that do really well in Florida heat and sun. It seemed through the course of the year, new plants and existing plants seemed to be piling up and creating a clutter in front of the house, so I had to do some manicuring of the grounds.

This is a good thing, because Mikes been working on cleaning out the garage to make space for the two benz’s. And now, I’ll have a little garden center in the garage too!!! Fingers crossed.

I ran a little longer than anticipated and  I’m now just getting to my juice I juiced 10 minutes ago. By now, I’d be drinking my second Spoonful of Barley Max mixed with water and thinking about lunch. But instead I have a Carrot, Celery, Apple Juice drink that I’m filling up on. Hopefully this will take away my hunger pains.

Since Friday, I’ve been feasting on the two meals I made.  One dish I’ve already made Better Than Tuna,  and it’s a raw dish that actually tastes like tune because of the Kelp, Parsley and Dill from Rhonda’ No-Oil Dressing. I’ll put up the recipe for both. But the second creation, also raw  is a What’s For Dinner Loaf, which really isn’t a loaf. It just looks like a loaf with all the Pumkin Seeds and Nuts in it.

Saturaday, we ate out for lunch up in Jacksonville at the P.F. Chang restaurant. Where, I was pleasantly surprise to see a steamed Veggie Bowl on the menu. So I ate that, and left behind much of the brown rice and the tofu in the dish. But gladly ate the Snap Peas, Broccoli, and Carrots.  We came back home from grocery shopping at Costco in Jacksonville and I broke into the Whole Wheat Bread Loaf which was made that morning by the Costco Bakery. I broke off a piece and set it on my plate next to the Better Than Tuna dish and proceeded to take a second helping of each. Boy was that ever good. !!!! But to things I have to get off my chest about yesterday(Saturday). I got myself a Berry Smoothie from Costco, which I shared with Mike on the drive home and then again at night, I had some Raspberry Sherbert with Whip Cream. Two bad things right after another. I feel disgusted with myself for doing, but it was so good and I got on the scale and I still managed to stay or go up to 174lbs. Enough of that!!!

Better Than Tuna

2Cups Carrots

1Medium Bell Pepper

2Stalks Celery

1/2Medium Red Onion

1/2tsp. Celtic Salt

1/2Cup Parsley

1/2tsp. Kelp

4Tbps Rhonda’s No-Oil Dressing

Rhonda’s No-Oil Dressing

1Cup Raw Almonds(Soak Almonds in water overnight)

1Cup Distilled Water

Blend Almonds with 1Cup Distilled Water until creamy and add:

2tsp Nutritional Yeast Flakes

1tsp Kelp

2Tbsp. Lemon Juice

1/4Tsp. Celtic Salt

1Tsp Herb Seasoning

1Tbsp Minced Parsley

2Tsp Garlic Powder

2Tbsp Dried Onion Flakes

1Tsp Dill Weed

Pinch of Cayenne Pepper

1Tbsp Raw Unfiltered Honey

Blend to mix…. and add the veggetables & seasonings from Better Than Tuna recipe.

What’s For Dinner Loaf

1 1/2Cup Flaxseeds

1/2Cup Almonds

1/2Cup Pumpkin Seeds

1/2Cup Red Onion

1Cup Carrots

1Cup Celery

4 Garlic Cloves

1Tbsp Rosemary

1Tbsp Sage

1tsp Celtic Salt

Blend Almonds and Seeds until a meal consistancy is reached. Mince Onion, press Garlic and finely shred Carrots. Juice Celery and discard the pulp. Mix all together and let it stand for several hours for flavors to blend.  The longer it sits the stronger the flavor becomes.  And tonight I can’t wait to taste what the What’s For Dinner Loaf will taste like after it’s been mingling with all the flavors for the past two days..!!!

Orange Hands

I really noticed this the other day, when I was driving down to my doctors appointments. My hands had an orange tint to them. I thought to myself that’s odd. I hadn’t really noticed them like this before. So I brushed it off, until it happened again a couple of days later. I thought, well I had just finished peeling the carrots, celery, beets and apples to make my juice drinks for the day. Maybe it was that. But then today, my hands don’t have the orange tint to them?????

Then I remembered reading when I started the Raw Eating Plan… that carrots have I think the Beta Carrotene(?) in them that tints the skin. It’s not serious or dangerous for that matter. But I always thought yeah sure! because my skin wasn’t turning orange…. until now!

I thought that bared mention.. just because it’s now happening.!

Well, I finally finished the Garden Salad I made earlier this week. I ate it for dinner along with another batch of the Almond Butter. Boy that stuff is really good. I made this second batch a bit more spicey, maybe my metabolism will speed up! 🙂

Concentrated on my arms last night… and this morning I can feel the difference. They’re a little bit more stiff. But I’ve got to get the Michelle Obama arms!!!!!

Lunch With Robin

This afternoon, my partner in crime came over. We chilled and caught up on things since the last time we got together(last week). I told Robin about all my doctors appointments I had last week and this week. They were all annual visits with the doctors to see how I was doing with my health and weight loss. Last year, I checked in with the Doctors because I had chest pains, joint pains and overall I knew I was not healthy. It turned out I have asthma, and I was about 50lbs overweight.

Since then, as you know I’ve lost 10lbs from eating Raw Foods since September but technically,  my weightloss started in May. And since then,  I’ve lost about 25lbs overall. I told Robin how excited my doctors were and they were congratulating me on the weightloss and how well my testing was. I still have some blood work (for cholesteral) to be checked and compare it to last years numbers. I feel confident that the numbers will have moved from the dangerously high to normal range.

While we were chatting about that, we were making some food to munch on. And I have to admit, I didn’t go all out like I usually do with the preperations. Infact I reheated last nights meal and Robin put together a nice little Almond Butter Cream for some Cucumbers I chopped up. It was delicious!!!

Lunch was last nights Eggplant & Rice Casserole:

31/2Cups Eggplant

1 Bell Pepper

2 Gralic Cloves

3 to 4 Medium Tomatoes

1 Medium Onion

2Tbsp. Salsa – 1Cup Tomato, 1/2Cup Red Bell Pepper. 1/2Cup Corn, 1/2Celery, 2Tbsp. Onion, 1/2Cup Green Bell Pepper, 1/2Cup Cucumber, 1tsp. basil, oregano, cilantro, Celtic Salt, 1Clove Garlic, 2tbsp. Virgin Olive Oil, 2Tbsp. Honey. Chop and mince veggies, place half into blender until smooth and combine with remaining veggies and add seasoning.

1Tsp. Celtic Salt

1Tsp. All Purpose Seasoning(I left this out)

Chop up eggplant, dice onion, pepper and tomatoes, and mince garlic. Steam eggplant for 5 minutes. Add pepper and onion and minced garlic and steam an additional 2 minutes. Mix in tomatoes and salsa, simmer until juicy for about 5 minutes. Add seasonings and mix well. Serve over Basmati Rice.

Almond Butter Cream:

2Tbsp. Almond Butter

4Tbsp. Soy Sauce

1Tsp. Chopped Pepper

2Cucumbers chopped

Mix the Almond Butter and seasonings and spread onto Cucumber.
